And I’m back! After I shared the Greek feast with you Saturday night I kind of went off the grid for the rest of the holiday weekend. There was yard work to be done and family time to enjoy. I had good intentions of blogging Monday night but instead found myself in bed at 9:30 p.m. Necessary!
A fun overview in few words for you here. You’re going to see lots of recurring food themes (watermelon, berries).
SUNDAY
Breakfast…Great Harvest Honey Wheat with Justin’s Honey Almond Butter, grapes, watermelon
My husband on the roof = heart palpitations and panic from me!
Dad and Brandon cleaned the roof and gutters. Awesome.
Lunch…half of a tomato sandwich on whole wheat with watermelon and unpictured lemon bars. The quintessential summer lunch!
And then I sawed down two overgrown bushes/small trees. Sullie loved playing in the mess. I am embarrassed to admit how much I liked clearing everything out and my shoulder is still sore from sawing! I love seeing instant results.
Family cookout at my in-law’s house with my parents. My brother-in-law went crazy with the meat on the Big Green Egg.
My plate…tomato pie (seriously life changing – check out the recipe on my food blog), creamed corn, blue cheese cole slaw, chicken breast.
+ a glass of red wine and another small slice of tomato pie.
My contribution to the cookout…dessert, of course!
Mixed berry shortcake…strawberries, raspberries, blackberries and blueberries with homemade whipped cream and choice of biscuit or angel food cake. Yum, yum and yum.
MONDAY
I woke up at 8 a.m. and my parents were nowhere to be found. I looked out in our front yard and saw that my mom and dad were digging up a very overgrown bush and planting a fig tree for us. They’d been at it for an hour. I felt so guilty but so excited they planted the fig tree. Can’t wait until our little tree starts producing figs!
Breakfast…vanilla honey Greek yogurt, Earth Fare’s Tahitian Vanilla Granola and fresh berries.
My parents packed up the car and headed back to Atlanta around 10:30 🙁 I was sad they had to leave. We were so appreciative of all of their help and advice this weekend.
I planned on running outside but we had thunder storms from the time my parents left through the rest of the day. Boo. I felt so gross from all of the weekend eating and couldn’t wait to get a good workout in. I changed into my gym clothes and pestered Brandon until he did the same and we headed to the Y together. I attacked the dreadmill and ran a fast 4 miles with several speed pickups and incline changes. After running I went to the free weight area and did abs (including a 5 minute plank/hover!), lunges, stretching and foam rolling.
Lunch was leftover spanakopita and green beans.
And the rest of my day went unpictured. Since it was raining we went to the mall to use gift certificates we’d been holding on to since our wedding (2 years ago!!!) to buy new bedding. The shopping trip was a success! I’ll take a picture of the finished product to show you guys once we get curtains hung.
After shopping we went to Brixx Pizza to take advantage of their $1.95 draft special on Mondays and ended up craving pizza after sitting at the bar and watching them come out of the oven for an hour! We had a buy one/get one for Pizza Peel so we went there for dinner. I had an 8-inch One Veggie – red sauce, mozzarella cheese, artichokes, mushrooms, goat cheese, roasted garlic and pesto. So good.
TUESDAY
I had oatmeal on my mind this morning.
In the oatmeal: 1/3 cup oats, 2 tbsp Bob’s Red Mill 10-Grain Hot Cereal, 1/2 banana, cinnamon, chia seeds, raisins
On top: Justin’s Honey Almond Butter, strawberries, blueberries
Lunch was all about the produce…
Salad: baby greens, spinach, grape tomatoes, almonds, raspberries, blueberries, feta, carrots, dried cranberries and topped with balsamic vinaigrette.
On the side: Trader Joe’s wheat thins, watermelon and grapes
I taught BodyPump tonight. I had a few minutes to spare before class so I hit the treadmill for a super quick 1.25 mile sprint. I worked up quite a sweat in 10 minutes! I was ready to work tonight so I taught a really hard lunge and shoulder track 😉
Dinner tonight was another produce creation…so much good stuff in my fridge from the weekend farmer’s market haul.
Ratatouille over cheese grits. A Southern spin on a French classic. Dessert was leftover berry shortcake served with angel food cake and light ice cream instead of whipped cream.
And that about does it. Whew. Will be up early for a hot vinyasa class at Y2. Tanner has been gone for 9 days at a training and is finally back. Can’t wait for class.

Ooo, nice job on the Memorial Day feast. We maxed out my mom’s Egg too and had to pull multiple shifts. Six slabs of baby backs, 6 chicken breasts, 12 hamburgers, 10 beer brats….we put the “pro” in protein.
