Today started off much like the last few days – with a bowl of apple cinnamon oats (recipe posted here). While I do eat oatmeal most mornings, I usually switch up my mix more often than I have lately. Sorry if I’m boring you guys but I had half of an apple in the fridge just begging to go in my oats. I promise to add some variety tomorrow!
Back on track with the veggie-centric lunches. My sad fridge from yesterday has been restocked!
Light cream cheese, roasted red pepper hummus (maybe a tablespoon of each?), sundried tomatoes, sliced cucumbers and baby spinach on a 12 grain English muffin. Side items were carrots and fresh pineapple. The pineapple was so good and sweet – almost like dessert!
I also packed a Vanilla Chobani and Cranberry Raisin Bear Naked Cereal for snack but I didn’t eat lunch until 2 so I never ended up wanting it this afternoon. All packed up and ready to go with Yogi Green Tea Kombucha and a leftover Easter Chocolate.
English muffins were on sale at the store this morning and I like to keep some in the freezer. I decided to try the new Thomas’ 12 Grain variety and mainly because they featured an interesting mix of grains and decent amount of protein.
Overall, I’d have to say that these get two thumbs up. Great for my veggie sandwich and I think they’ll also be tasty toasted with almond or peanut butter and jam (is anything NOT tasty when it’s covered in almond butter and jam?).
For some reason, unbeknownst to me, I have been SO thirsty today. I downed three 20-ounce bottles of water + two cups of tea before even leaving work today and much, much more before, during and after hot yoga.
Brandon is at an Alice in Chains concert with a friend tonight – I didn’t know they were still around??? So glad he went with a friend and didn’t drag me along! Instead, I did “things Jen likes to do” and went to a 7 p.m. hot vinyasa class at Y2 Yoga. I love this class but haven’t been able to attend the last few weeks because I’ve been subbing BodyPump on Tuesdays.
For whatever reason I found tonight’s class to be very challenging for me physically. Maybe it had something to do with my hydration issues earlier in the day but I thought it was extra hot in the room and my heart rate was up really high. People always ask me how I manage the heat in hot yoga (it’s around 100 degrees) and I always say that I don’t really notice the heat anymore. Well tonight I definitely noticed the heat. Post yoga, desperately in need of a shower. Yoga is not glamorous people! You sweat buckets!
Solo dinner tonight is leftover Thai Broccoli Noodles with Tofu. Keeping it simple since I didn’t get home from yoga until after 8:30 and we have tons of leftovers.
And the grand finale is a peanut butter cookie that my mother in law sent home with Brandon. A perfect way to finish off the night!
I really should tackle packing more but I think I’ll wait until I have Brandon’s company! Sullie is a little freaked out by the boxes and the mess. Does anyone else’s dog get a little stressed when you move? How do you deal?
And I’m still hungry…off to find another snack. Night!
Sammy got really stressed out when B and I got married and I moved in. He calmed down after awhile but he required so much more attention initially. He went through it again when we bought our Vestavia house but it was much easier. He’s also the most neurotic dog on the planet so I think we had an extreme case. Just spend a lot of time with her and get her accustomed to her new house – which I think you already do!
