It’s a rare Saturday in Charlotte for me. I have no plans and a whole day to do whatever I want! No work, no social engagements…nothing! I did find out at the eleventh hour last night that I was needed to sub a yoga class this morning so I started my Saturday bright and early with 50 hard-working yogis who powered through 90 minutes of super hot and sweaty flow.
First order of business after teaching was a shower, cold smoothie and coffee before heading out to the Charlotte Regional Farmers Market. I haven’t been to the market in months due to work obligations so I was thrilled to get there this morning. It was the best market I’ve been to in a really long time.
I loved my haul today…peaches, eggplant, several varieties of tomatoes, squash, zucchini, blueberries, corn, sourdough bread, watermelon and a pound of North Carolina sea bass (fish tacos are on the menu for Sunday night!).
I tomato sandwich was a must for lunch today. I used one of the Cherokee purple tomatoes and the sourdough bread that I purchased to make a killer sandwich. I made a herb mayo using basil and parsley that I’ve been growing and gave the tomatoes a nice dose of salt. Blue Diamond Nut Thins and spinach salad with feta, strawberries, almonds and aged balsamic and olive oil on the side.
Sullie is also enjoying our relaxed day and has been sunbathing and napping away. Why is she so cute!?
Hope you’re also enjoying a relaxed and sunny Saturday!
What’s your favorite way to enjoy summer tomatoes? I love tomato sandwiches (obviously!) but I also think I’m going to make a tomato pie this week! 🙂
I’m so jealous, i have yet to find a good tomato this season. I love them sliced with sea salt or on a sandwich, salad or eggs! Yum! Sounds like the perfect Saturday. I hope you have a great weekend!
Tomatoes are my favorite next to okra. How have I not made a tomato pie this summer?! #Charleston fail. Enjoy your day off. 🙂
No formal commitments of any kind for me today, either! At first I was really bummed that most of my friends are out of town or busy this weekend (and being in college, I’m several hours away from family), but I quickly realized how many solo things I’ve been needing/wanting to do lately but haven’t had time for! Cleaning, shopping, cooking, and crafting top the list.
This summer I’ve been hooked on tomato/avocado combinations…Most of the time I just combine the two in a bowl with lime juice, garlic, cilantro, salt, pepper, and cayenne. Great for topping Mexican dishes or just eating with a fork. Tomato pie certainly sounds interesting. Enjoy the rest of your day!
Ahhhh! Farmers Markets are the bomb! All the food you got looks delicious.
The Saturday market is my favorite weekly activity! I look forward to it all week!! Loving the blueberries. So glad it is blueberry season (:
I LOVE a good grilled cheese with tomato. yum. 🙂
I like putting them with sliced red onion, crumbled blue cheese, and some olive oil and balsamic vinegar…soo good!
Love a good market run! I likely tomatoes stewed : )
I absolutely love when I have weekend days with no works or firm plans, it is my time to relax and destress from the week. It also allows me to so some of the things I love but always get pushed to the side when life gets crazy. All those tomatoes look gorgeous, I got a pretty substantial haul at the market today, but am wishing I also picked up some heirlooms!
I’ve been eating a lot of tomato sandwiches this summer. My other favorite way to eat them is just to slice a whole tomato and add a little salt–simple perfection!
I love tomatoes… and have never heard of tomato pie!! What’s your recipe?!
I like fresh tomato with cucumber and tossed with feta and a little balsalmic vinegar
