Sullie and I loaded up around noon today for a road trip down to Georgia to visit my grandmother.
Sadly, I left Zoey in very loving care in Charlotte because she’s a little too crazy right now for me to manage by myself in the car for four hours. I was also worried about her jumping on my grandmother or accidentally scratching her. (We’re working on her manners!)
The Girl on the Train kept me occupied on the way down. I only have about 30 minutes left!
My grandmother’s only request was some Trader Joe’s goodies so I stopped by the store this morning to get her some fun stuff.
Sullie is super happy to be here! Porch sitting is our fave. It’s going to be 81 and sunny on Sunday. I plan on spending the entire day out on the porch.
Let’s catch up on what I’ve been eating this week…
Smoothies most days for breakfast but I did pack overnight oats for the gym on a morning that I had four clients in a row.
And another day I had a breakfast date with a friend at Another Broken Egg. I had an egg white omelet with asparagus, roasted red peppers and goat cheese.
Lunch soup + salad. I roasted beets for the first time in a while and have enjoyed having them back on my salads.
Lunch salad + a wrap with corned beef and avocado. I love corned beef and it was on special at the deli since it’s St. Patty’s time.
Panera You Pick Two with black bean soup and Thai Chicken Salad. Fun fact: if you order on the self-service kiosks you can customize your salads. I changed the romaine to spinach and added a few other toppings. It was super easy! I can never resist the baguette on the side.
Lots of good dinners. Marinated chicken, cous cous and kale sprouts. It was my first time trying kale sprouts and I LOVED them. I sauteed them in a skillet with olive oil and then finished them covered with a little chicken broth and then topped it off with parmesan to serve.
Filet topped with goat cheese, shredded brussels sprouts cooked with applewood smoked bacon, roasted carrots and mushrooms.
Frozen pizza from Whole Foods + salad on a night I didn’t get home until 9 p.m.
Salmon panzanella from Foxcroft Wine Co on a night I had a friend get together.
Zucchini noodles topped with marinara and Trader Joe’s sun dried tomato and basil chicken sausage.
Honey Balsamic Glazed Chicken with sauteed Tuscan kale cooked with applewood smoked bacon and roasted sweet potatoes.
And that’s all I’ve got. Off to enjoy as much sleep as possible. After a week of very early wake up calls, I am thrilled for two mornings of no alarms!
How fun that your Panera has self-service kiosks! I don’t think the ones near me have those yet, but that sounds like a great idea.
And those rare mornings with no alarm set are bliss. Hope you get lots of good rest!
Oooh kale sprouts! Sounds like an epic combo of two of my most loved veggies! And you just reminded me of corned beef – I may have to get some in honour of Irishness this week 😉
Is it bad that I customize my Panera orders without the kiosk? Lol. I make my changes politely, they have never given me an issue either. I keep meaning to buy the Kale Sprouts!
Hi Jen! Love reading your blog! I was wondering… When you cook your meals, do you only make enough for one serving? I cook for myself and always have so much food leftover, I eat the same thing for days! Just curious how you make such a variety of meals and not waste food so I can start doing the same! Thanks 🙂
