My Saturday included everything from yoga to cleaning baseboards to pool time with friends. It was pretty nice, especially since I started the day by sleeping until 9 a.m. I actually had to drag myself out of bed and over to the gym of our very first Saturday class at the new location. We had a little party after class to celebrate the winners of our Paleo Challenge.
I baked a batch of my favorite peanut butter chocolate chip bars last night for the party. We were celebrating with non-Paleo foods – pizza, beer and peanut butter bars!
We had a great turnout for class! I planned on participating and doing the WOD but once I got there I decided to just take pictures/videos instead. I was pretty wiped out from yesterday’s workout and more in the mood for yoga rather than CrossFit.
After a trip to the farmers market and a couple hours by the pool with friends, I finally made my way back to my yoga mat. My practices have been few and far between over the past month and I was MORE than ready for 90 minutes of sweat and stretch.
Thank you so much to my sweet friend Angie for a beautiful and very challenging practice. I Tweeted Angie that I was eating a strawberry cupcake in preparation for her class and she assured me I would burn it off. She was right!
After class I went a little crazy cleaning and not only vacuumed and mopped but also wiped down all the baseboards. I took Sullie for a long walk while listening to a very interesting podcast. I got to work on dinner when we finished working. I had all the ingredients for stuffed chicken in the fridge.
I pounded out my chicken and then stuffed it with sautéed spinach, smoked sun dried tomatoes and goat cheese. I loosely followed this recipe.
I made a salad and whole wheat cous cous with sautéed mushrooms and parmesan for the side items. I love stuffed chicken. So easy and so tasty!
I have never made stuffed chicken but I am totally going to try it out!

Wow, crossfit must be really big in your area. I have been working with a trainer for 4 yrs, and he now wants to open his own gym, which I plan on investing in. But I am concerned about the lack of profile for crossfit in this area (metro east St. Louis). I have yet to encounter anyone who even knows what it is.
Speaking of which, I have a hard time explaining to someone what crossfit is – how would you describe it?
I don’t know what looks better–the chicken or the bars! I never think to roll up my chicken with some goodies on the inside. Every time I see a recipe of it, I make a mental note. Then the note never makes it from my brain to the plate!
YUM – that chicken looks delish. I made something very similar in the crockpot a few yrs ago.
