Today was not an exciting day. I kind of can’t believe that I’m updating you guys with the details…so hang with me here.
Breakfast was Apple Cinnamon Oats (no picture) but delicious. 1/3 cup oats, 2 tablespoons Bob’s Red Mill 10-Grain Cereal, dash salt, 1/2 cup water, 1/2 cup skim milk, raisins and Trader Joe’s CranApple Butter then topped with Crofter’s and Trader Joes Almond Butter.
Lunch was totally out of the ordinary for me. While I was making my oatmeal I read on the CranApple Butter that one of the suggested uses was as as spread on a turkey sandwich and I thought about it all morning. I ususally do not eat meat for lunch but buy it for Brandon. I had to make an exception to my rule today.
Whole wheat bread, CranApple Butter, extra sharp aged white cheddar, turkey, a small spread of mayo and baby greens. I put the sandwich (sans greens) under the broiler for about 5 minutes to get the turkey warm and the cheese melty. Delicious!
Here’s the whole plate – sandwich, a handful of Cape Cod 40% Less Fat Kettle Chips and cantaloupe.
And now some bad news. I think I may be getting sick. My throat felt weird all day and it hurts now. One of my friends was sick last weekend at the wedding and I’m praying I didn’t catch what she had. I decided to skip my planned run and take a rest day because I really want to stop this sickness. STAT.
Dinner tonight was a kitchen creation. I had chicken breasts and had planned on making a grilled chicken salad but just really wasn’t feeling it. I got creative with what I had in my pantry/fridge.
Chicken stuffed with feta, Kalmata olives, sundried tomatoes, spinach and oregano. On the side was whole wheat couscous and sauteed spinach.
Off to rest and try to knock out this sore throat.
What do you do when you’re starting to feel sick? How do you try to knock it out? I need suggestions – my parents are coming to visit this weekend and I don’t want to be sick!
