Hey, hey! I hope you’ve all had a great week.
I wanted to pop in quickly to share a new smoothie and salad combo that I’m loving this week.
The star ingredients of the smoothie are pumpkin, almond butter and chocolate coconut granola. The team at Cascadian Farm sent me two different flavors of their new Protein Granola to check out and the Dark Chocolate Coconut is AMAZING. I’ve been making this smoothie and topping it with the granola all week. Here are the details.
- 2 cups spinach
- 1 frozen banana
- 1/3 cup frozen blueberries
- 4-5 frozen strawberries
- 1 large pitted date
- 1/4 cup 2% plain greek yogurt
- 1/2 cup almond milk
- 1/3 cup pumpkin puree
- 1 tablespoon almond butter
I have eaten a variation of this salad the last 4 days in a row. It’s simple, delicious and fall-ish.
- Spinach
- Arugula
- Pears or apples
- Roasted beets
- Dried cranberries
- Walnuts or sliced almonds
- Avocado
- Goat Cheese
- Deli turkey
- Aged balsamic (and today I also used a little honey mustard…love to mix!)
I get a lot of questions about what I put in my smoothies and how I come up with my salad combos so hopefully this is helpful and gives you a little inspiration!
What’s been your go-to breakfast or lunch for the week?
My go-to lunch is usually a salad with whatever salad staples I have. I usually stock up on romaine, spinach, olives, olive bar items, avocado, cucumber, and tomatoes. I add a protein, like beans, eggs, tofu, or salmon, and I’ve got a quick meal 🙂
Don’t hate me, but i don’t really eat breakfast! I haven’t had salad in a whole actually, and miss it a lot. Tha is for bringing it back for me. 😀
I never want smoothies but the added edition of a good granola for the crunch and chew factor definitely makes it enticing to me! I am in a lunch and dinner rut I think. Just not in the mood for the usuals and can’t even figure out what I am looking for. Bleh.
So glad to see you are eating your smoothie with a spoon…LOL! I’ve made some killer green smoothies this week and actually making one this morning that is going in a “almost” empty peanut butter jar. Have a fabulous weekend! xoxo

My husband and I both love a particular smoothie in the morning – almond milk, protein powder, chia seeds, instant coffee, cocoa powder, frozen bananas, and spinach. SO good!
Your salad looks awesome! I always get salads with fun toppings like apples, dried cranberries, and nuts in restaurants but for some reason, I never make them for myself and usually just stick to basic veggies. That’s going to have to change!
I’ve been loving egg sandwiches and overnight oats for breakfast lately.
That smoothie sounds awesome, i think i have all the ingredients so I’m definitely trying it soon!
I love how you put the granola on the smoothie! Adds that texture! I’ve been loving fried eggs with english muffins– dippy!
