Yesterday’s post stopped right before dinner.
Citrus grilled chicken, grilled zucchini and whole wheat couscous with goat cheese, balsamic, homegrown tomatoes and herbs from the garden.
I packed my breakfast and work clothes Thursday night so that I could continue my Friday morning yoga tradition. With my new job I need to shower and get ready at the studio to make it to work on time. I’m not going to lie. When I got up at 5:35 a.m. I was NOT feeling yoga and getting ready at the studio but I knew that if I just forced myself to follow through I wouldn’t regret it. Of course, I was so happy that I went. There is just simply no better way to start the day than with an awesome yoga practice! 🙂 I love my yoga studio!
Breakfast was overnight oats eaten at my desk. I felt kind of bad about eating at my desk on my second day but I was there a few minutes early and I just cannot skip breakfast.
I was able to head home for lunch today. I really like eating lunch at home because it’s much cheaper and I always make healthier choices and eat less than I would if I went out.
Whole wheat pita, roasted red pepper hummus, grapes, cucumbers and leftover couscous from Thursday’s dinner.
Getting to the title of this post…I grew up in Georgia and have lived in the South my whole life. I am 100 percent a Southern girl. Tonight’s dinner was totally reflective of that.
Fried green tomatoes topped with homemade pimento cheese, squash and zucchini with vidalia onions and fresh off the Big Green Egg pulled pork…all while rocking out to The Avett Brothers. First, I must admit that this was seriously (not lying) my first time EVER frying something. It was totally worth it (although will not be a regular occurrence in my kitchen!). Second, I must brag on my husband. He was tasked with slow cooking Boston Butts to make pulled pork for 60 people this weekend. He totally rose to the challenge.
Check out that beautiful pulled pork. I wasn’t even going to eat meat tonight but I couldn’t resist a few bites of this! So incredibly tender and moist.
Speaking of a Southern girl…I am blogging on our patio while listening to Zac Brown Band (newfound love – I usually am not the biggest country fan) and drinking a Firefly sweet tea vodka with lemonade. I love Fridays!

So happy you’re loving your new gig! And sticking to your workout regimine! Wowzers! BTW – your fried green tomatoes look amazing. You can’t call yourself a Southern girl if you don’t like them! Have a good weekend! I’m off to study again. So hard when you’re at the lake! Uggh….
mmm your dinner looks fab – sounds like a perfect Friday night! We’re big Zac Brown fans too – we actually danced to “Free” as our first dance at our wedding!
