I had a good Friday but Sullie had a REALLY great Friday.
I started my day with an early morning yoga practice and apple cinnamon oatmeal before heading into the office. (How sick are you of my oatmeal kick?)
I came home for lunch and made a classic lunch combo – grilled cheese and tomato soup! My grilled cheese was apricot preserves, pepper jack and spinach grilled on Great Harvest Dakota in a cast iron skillet with butter.
Then the day got fun…Friday afternoons are pretty slow at the club and the owners had encouraged me to bring Sullie in to hang out in my office.
So this happened! Sullie spent the afternoon chilling in my office (and getting lots of visits and pats…she was in heaven!)
Her favorite activity was looking out the windows and checking out everything going on around us.
A Friday afternoon treat was necessary so Sullie and I walked across the street to Yoforia.
While I dug into my fruit-filled cup of yogurt, Sullie lounged frog-style and got more pats and attention. After yogurt I had to make a deposit at the bank and Sullie got a cookie from the teller in the drive-thru.
I’m sure she didn’t think her day could get any better but I decided to take her for a short run. We covered about 2.5 miles and the temperature was perfect. We were both happy after our afternoon together! 😛
I quickly showered and got dressed to meet Rachael and Katie for dinner at Cantina 1511.
We immediately ordered margaritas and attacked the chips, salsa and guacamole. I cannot drink normal margaritas because the sweet + sour mix makes me feel terrible but Cantina had all kinds of alternatives. Katie and I got the Twiggy which was their version of a “skinny” margarita and so easy to drink and not overly sweet.
I ordered the Mexican Chopped Salad and a fish taco for dinner.
Dinner was great but the conversation was even better. I’m so lucky to have such strong and smart women as friends!

That sounds like a perfect day Jen!! Now I’ve got grilled cheese and tomato soup on the brain. I love your combination and can’t wait to give it a try. Sweet and salty, mmmm!! Do you tend to go for the fruity flavors or “ice cream” (chocolate, cookies n cream.. ) at Yoforia?
fruity – always! i had tart, cheesecake and key lime on friday.
I love it when Mexican places have margaritas without sour mix. I hate the way sour mix tastes.

Dogs make everything better!! And that grilled cheese combo sounds insane…unfortunately I just ate lunch or I would re-create it!

I love your oatmeal breakfasts. I was on an oatmeal kick a couple weeks ago but I’ve been changing it up with yogurt bowls, pancakes, and waffles.
Sullie is so cute! She seems so friendly and fun.

If you ever visit Kansas City, you must go to Westside Local and have their grilled brie cheese with tomato soup! Yum. Also, since you are about shin deep into Cross fit now, I’m surprised you haven’t began to shift into Paleo like most Cross Fitters. 🙂

I love that I’m not the only one who tops my frozen yogurt with fruit and Cinnamon Toast Crunch. My husband always laughs at that combination.
