Saturday was such a good day. The weather in Charlotte is incredible this weekend and I’ve been soaking it up as much as possible. So much so that instead of yoga or CrossFitting Saturday morning, I did this…
Ran! I set out to run 3 or 4 but I felt so good that I ended up going 7! This is the longest I have run in many months and I was so happy that it felt good. It gave me hope that a Fall half marathon may be a realistic goal! I ran from the gym so the second I got back I hit the foam roller. I think it helped a lot with my hip/IT bands because I didn’t have any soreness after the run…just that awesome tired legs feeling that you get from long runs.
Lunch when I got home from my run was another tomato/basil/cheese panini on sourdough along with watermelon and sliced heirloom tomato and avocado. I am loving this sandwich combination lately.
Speaking of watermelon, I am so obsessed with it this summer. I can’t remember ever enjoying watermelon as much as I have lately. I can’t get enough. I have been keeping a constant supply of cubed watermelon in a Tupperware in the fridge and eat a few pieces every time I open the fridge.
I spent the afternoon at the Y pool with some friends laying out and chatting. One of my friends has a 4-year old daughter who was at the pool with us and she asked, “Mommy, why do Jen and Maddie have on bathing suits if they’re not going to swim in the pool?” She did not understand the appeal of laying in the sun. It was so cute. Of course, you couldn’t keep her out of the pool. We were all reminiscing on those days when you were a kid and spent the whole day in the water.
I treated myself to Pinkberry after the pool. I think that Pinkberry is my favorite frozen yogurt. I really prefer the taste of it over TCBY, Menchie’s and Yoforia. I just wish it wasn’t quite so expensive. I also have to admit that I like that the employees put the toppings on for you. The self-serve places are fun but I often cringe when I see the kids going crazy with the toppings and reaching for/touching everything.
I got a text yesterday evening from a yoga friend that they were getting a group together last-minute for dinner. I said, “I’m in. Patio preferred!” We ended up on the patio at Zink. It was the perfect temperature for sitting outside and we ate, talked and drank wine for hours.
I was craving red meat so I ordered a burger with no bun and subbed a salad for the fries. The burger was served with pepper jack cheese, guacamole and black bean/corn salsa. Also, fried onions but I removed those. It was so good!
I could not have asked for a better Saturday. I’m so lucky to live in a beautiful city and have such great friends!
I’ve never been to Pinkberry even though there are at least two that I know of in Atl. That probably needs to change. As for Yoforia and Menchies, I think Yoforia has better yogurt but Menchie’s has better toppings.

Isn’t it the best when you have an awesome run and you run way longer than you expected??!! I had the same thing a few weekends ago, went out for 4-5 and ended up at 9!
Do you have a panini maker, or do you have a trick for making the sandwiches with basic kitchen tools? I’d love to make a one but don’t have any special equipment.
Also, do you have a Red Mango in your area? It’s self-serve, but it’s my favorite fro-yo place!
i do not have a panini maker. my super legit method is to use a cast iron skillet and then use a little heavy le cruset pot on top to smoosh the sandwich. haha.

Your description made me actually want to go on a run haha. But today is my day off plus I have an annoying cough, so no change in plans. As usual all your eats look delicious. I need to do some laying out in the sun myself. I remember when I used to think it was so boring! haha
What a great night! I do love Pinkberry, especially their blood orange frozen yogurt. Perfect with coconut, almonds and chocolate chips. 🙂
And now I really want a burger.
What panini press do you use? I almost bought a cast iron skillet today and instantly thought of your sandwiches!

That looks like a perfect Saturday to me! I wasn’t planning on running at all yesterday but when I went outside to get in my car to go to the gym, I knew I wanted to run–and it was awesome! 😀 Great minds must think alike. 🙂
