I’ve been up since 5:30 this morning working on PBR. I’m trying to get posts lined up so that you’ll have something to read while I’m away. There will be a mix of guest posts and posts from me covering a broad range of topics. Get excited!
This post must be quick because I have to get to work soon but I wanted to update you on some happenings from the last couple days.
Monday night dinner was Thai Green Coconut Curry with tofu and tons of veggies – eggplant, sugar peas, mushrooms, green pepper, zucchini.
Breakfast yesterday after a really crappy ashtanga practice (I won’t bore you with the details. Every day is a new experience on your mat.) was overnight oats and black coffee.
My lunch was extra delicious. An open faced tofu sandwich with mashed avocado, tofu, tomatoes, spinach and pepper jack. I really love tofu sandwiches. I will share my method for cooking the tofu and assembling the sandwich sometime soon. There have been requests! 😛
Afternoon snack was an organic pink lady apple and an Honest Tea. I love these teas. They are just barely sweetened (with real sweeteners, not fake) and this variety has just 34 calories per bottle.
After work we headed Uptown for a party for my friend Lina. Her boyfriend organized a small surprise party for her 30th birthday. While we waited for the birthday girl to arrive, I checked out the awesome set up on the 10th floor clubhouse of her condo building.
And then the birthday girl arrived! She was VERY surprised. It was so cute! I think this might be the first real surprise party I have ever attended. You know, the kind that involves turning off the lights, hiding and jumping out at people yelling, “surprise!!!”
Lina and I went through yoga teacher training together and quickly became friends. She is smart, beautiful and so much fun to be around.
Lina is going to Vegas this weekend to celebrate. How fun!
Her boyfriend had a yoga-themed cake created for the party. I love it! And if you’re wondering about the Spanish…Lina is Columbian…and pretty much has the cutest accent ever.
Such a fun night!

My husband planned a surprise party for my 26th birthday. I was shocked! He really surprised me (it’s hard to do!). I had such a blast – all my friends and family were there – it ranks as one of my best birthdays ever.
Aw how sweet is that cake 🙂 What a gorgeous view at their condo… love the Charlotte skyline!
I threw a surprise 25th wedding anniversary for my parents. They had no idea!
And then my mom and I threw my dad a surprise 50th birthday party and then for my mom, my dad and I had a surprise 50th for her two years later! 🙂
And we are not a surprise party kind of family.
that cake is SO cute! and I looooove surprises, but I’m pretty difficult to surprise. so I’m typically the party planner. 🙂
I love surprise parties! I’ve only ever thrown one, my husband’s 30th at BlackFinn, and I was a mess. It was hard to keep it a secret, but somehow I succeeded- SO much fun 🙂
When I was a teenager, a group of my friends threw me a surprise birthday party. I had no idea it was coming. It was so much fun! It’s always a lot of fun when the honoree least expects it 🙂
