TGIF! I’ve got a big round up of meals for today’s post. I’m diving into my current vanilla yogurt obsession, sharing lots of delicious salad combos (per usual) and you’ll see a whole lot of sweet potatoes in my dinners. Not sure why I’ve been eating so many of them but yum! Maybe all the running has me craving something sweet and carby at dinner. 🙂

BREAKFAST
Lots of yogurt bowls in the rotation lately. I typically just do FAGE 5% with honey but I’ve been on a big vanilla yogurt kick. This bowl was Nounos Vanilla Bean Greek Yogurt with Purely Elizabeth Vanilla Chocolate Chip Granola, raspberries, blackberries, peaches, figs, dried cranberries and almond butter.
Here are three brands that I’m loving right now:
- Nounos Whole Milk Vanilla Bean Greek Yogurt – 15g protein, 14g sugar, made with real vanilla bean and definitely the sweetest of the bunch here – but the texture and taste is so good!
- Icelandic Provisions Vanilla Bean Extra Creamy Skyr – 11g protein, 9g sugar. I highly recommend trying Icelandic Provisions’ Extra Creamy Skyr flavors. So deliciously creamy and not too sweet.
- Siggi’s Vanilla Honey Rich and Creamy Skyr – 10g protein, 10g sugar – more vanilla than honey flavor.
Siggi’s Vanilla and Honey with banana, blackberries, blueberries, homemade granola and peanut butter.
Homemade cinnamon rolls, scrambled eggs and fruit.
I’m usually a black coffee drinker and very good about making my coffee at home and bringing to-go Yeti with me in the mornings…but I treated myself to a whole milk latte at Amelie’s last week and it was delish.
First pumpkin baked good of the (almost) fall! We made a batch of pumpkin spice banana muffins and I’ve been packing them in Finn’s lunch.
LUNCH
Tuna melt! Homemade sourdough, sliced avocado, tuna salad and muenster cheese. Here’s what I put in my tuna:
- Can of Wild Harbor albacore tuna in water
- Sea salt
- Pepper
- Mayo
- Plain greek yogurt
- Chopped sweet pickles
- Chopped pepperoncini – first time adding it and yum!
Mixed greens, seven grain and lentil blend, chopped turkey, chopped hardboiled egg, cherry tomatoes, carrots, avocado, dried honey roasted chickpeas, dried cranberries, feta, homemade balsamic vinaigrette.
Sourdough toast, mayo, bacon, basil, sliced tomatoes, hardboiled eggs, grapes.
Yummiest salad of mixed greens tossed with olive oil, balsamic, honey and sea salt, figs, carrots, roasted sweet potatoes, tomatoes, feta, pecans, avocado and dried cranberries.
Turkey sandwich on honey wheat with mayo, avocado, sweet pickles (liking this brand right now), muenster cheese and horseradish mustard heated under the broiler.
Organic Girl Protein Greens, diced apple, pecans, carrots, dried cranberries, avocado, chickpeas, feta and a can of Trader Joe’s lightly smoked salmon. Sherry vinaigrette on top that was leftover from a takeout meal.
Sourdough, peanut butter, honey, sea salt and sliced banana. Classic combo and I love it on sourdough for the contrast of sweet and sour-ish.
Mixed greens, avocado, red pepper, carrots, kalamata olives, chickpeas, feta, cucumbers, air fried chicken nuggets and ranch dressing.
Open-face sandwich on Verdant Pullman Loaf with mayo, avocado, turkey, tomato, muenster and broccoli micro greens.
Mixed greens, seven grain and lentil blend, carrots, apples, honey roasted chickpeas, avocado, feta, dried cranberries and honey balsamic dressing.
DINNER
Sautéed bone-in pork chops (from my friends at Bluebird Farm), roasted sweet potatoes and sautéed broccolini.
Shrimp fried rice. Here’s how I made it!
- Trader Joe’s frozen vegetable fried rice and Trader Joe’s frozen riced cauliflower stir fry
- Frozen gulf shrimp from Whole Foods quickly defrosted in a colander under running water and chopped
- One beaten egg
I cooked the two frozen fried rices together in a skillet with some oil and then added the chopped shrimp and cooked a few more minutes and then added the egg at the end. I just slide all the ingredients over to one side of the pan and then quickly scramble the egg on the other side and then mix it in.
Finish off with soy sauce or coconut aminos and sriracha.
Baked chicken thighs seasoned with Dizzy Pig Wonder Bird, frozen peas with butter and mashed sweet potato with butter and brown sugar.
Pasta bake with eggplant, squash, onions, kale, marinara sauce, fresh mozzarella, parmesan cheese, basil and rigatoni.
All plated up!
Salad with greens, air fried Trader Joe’s gluten-free chicken nuggets, avocado, cherry tomatoes, carrots, chickpeas and ranch. A piece of toasted, buttered sourdough on the side.
Sharing recipe for this one soon. Swordfish with an artichoke, tomato topping, roasted cauliflower and steamed rice.
Pulled pork (pulled out of the freezer – I had originally cooked a Boston Butt in the crockpot), roasted okra and a baked sweet potato with butter and brown sugar.
This is my favorite frozen pizza/flatbread from Trader Joe’s. If you haven’t tried it…do!
Roast pork (leftovers from takeout meal), roast sweet potatoes, black beans, roasted brussel sprouts.
You guys have to put this Honey Balsamic-Glazed Chicken Breast recipe on your dinner menu. Perfect fall dinner and super fast and easy to prepare. Roasted brussel sprouts and baby portobello mushrooms and a baked sweet potato on the side.

Would love to continue to hear more about how you focus on fueling/recovery while marathon training, especially anything that shifted for you compared to when you aren’t marathon training. My favorite way to eat sweet potatoes are with taco meat and fajita veggies on top or with a runny egg and bacon on top!
Icelandic provisions vanilla bean is my fav or Fage 2%, for sweet potato I love the frozen cubes from target that I air fry and use as a base for bowl meals. I usually do my Nespresso but for coffee out I love iced caramel latte with oat milk
