Hi! There are dishes to be done, laundry to be put away and a grocery trip to make but sometimes a girl just needs to lounge on the couch for a little bit on a Sunday afternoon. This weekend has been good but wore me out! I am sure you can guess what I spent all day Saturday doing…more house stuff and yard work!!!
But before I did that I got some Saturday morning relaxing in. I slept in until 8:45 and then grabbed coffee and hit the farmers market. I spent about an hour wandering around and got some great stuff for the week.
I thought these sweet dumpling squash were fun. The vendor told me they are akin to acorn squash which makes sense given their appearance. I also got a spaghetti squash, Italian sausage, ground beef (to make spaghetti sauce to go with the spaghetti squash!), NC mountain apples, peaches, tomatoes, okra and rainbow chard. It’s that funny time of year where you can still get all the summer stuff but start to see the fall produce too.
Lunch was Which Wich to power up for a long day in the yard. I love this place and haven’t been in forever! I got turkey with mayo and spicy mustard, lettuce, tomato, cucumbers, pepperonici, pepper jack, oil and vinegar. Yum!
And then I spent HOURS upon HOURS clearing this area on the side of my house. I could kick myself for not taking a before picture but it was completely covered in ivy , leaves and random little trees and bushes. Ripping up ivy is both cathartic and back breaking. I think I bagged 10+ bags of ivy and leaves. I can’t even tell you how much dirt I inhaled. I was coughing, sneezing and blowing my nose the whole time. Now I have to figure out what to do with this random little bit of side yard. At least it’s clear and I’m not freaked out to walk back there!
I never really thought I was super into yard work but it’s so gratifying to do this stuff and see an immediate result.
When I finally wrapped up around 6 p.m. I had a text from my friend Lina about getting together. I had no energy to go out so I offered to host an impromptu get together for some of our friends. Lina made us seriously amazing skinny margaritas with Patron, lots of fresh lime juice, agave and sparkling water.
And I put together a quick taco spread with chicken and fish and tons of fixing and offered soft tortillas, lettuce cups or chopped romaine so they could choose between taco, low-carb taco or taco salad.
I went the taco salad route and made a big one with romaine, black beans, corn, avocado, fish, chicken (half/half), salsa, cheese and sour cream. It’s making me hungry to look at this. Luckily I have a fridge of leftovers!!!
My friends stayed until a little before 11. I was so happy to have them…it’s been almost two years since I’ve entertained and I love doing it so much. I can’t wait to get my house 100% the way I want it and I’m going to have parties all the time! ๐ ๐ ๐

I would have to say either soft tacos or deconstructed on a salad would be my top choices for taco eating. That makes me so hungry right now ๐
I love tacos any way! I actually just bought these new organic crunchy corn shells at the grocery today to try later in the week and can’t wait to see how they are!
Which Wich is my favorite sandwich shop!! I love their buffalo chicken sandwich with avocado! But I really want to try their Elvis or Hawaiian sandwiches! (:

I like deconstructed as a salad with crumbled tortilla chips on top! You’re amazing to be able to just throw together a get together like that!

I LOVE doing a deconstructed salad over chips! It’s all about the crunch. I love taco night and those margaritas look delicious. Now I’ve got them on my mind…It’s been way too long since I’ve had one. Need to fix that ASAP. Again, impressed with all the yard work you are doing!
the margaritas were sooooo good. i just love them simple with lime juice, agave and good tequila.
I made bison taco bowls tonight! Love taco night– !!! Now that it’s getting colder we will probably do mexican/taco night once a week!!
oh yummy! bison sounds like a fun twist. and i love putting it all in a bowl! that’s what i did with the leftovers!
This is a really easy, great entertaining idea. I’m having some teacher friends over next weekend and I might steal this concept!
do it! i love entertaining with “build your own.” i’ve done it with pizza, mexican and chili and it works so well!
On lettuce wraps with grilled fish and all the fixin’s! On this weeks menu, grilled salmon tacos!
i’ve never done salmon…always tuna or a white fish like mahi or tilapia. i’ll have to try it!
Either a salad or soft taco … swoon. I think I know what I want for lunch now! haha.

Yum, I love taco salads!! I’m actually visiting my mom and her side Yard is full of ivy,little trees and weeds. It’s something I need to tackle bc I don’t want my mom doing it. What products/techniques do you recommend. I know I’m going to have to get down and dirty but could use some advice if you have any! Love the blog btw, I’ve been reading since forever! Xxxx
