After enjoying the ready-to-eat beets from Trader Joe’s and seeing beets all over the blog world recently, I decided it was time to take a stab at cooking with them. I found this beautiful bunch of beets at the farmer’s market on Saturday for $2.
I really wanted to use the beet greens too so I ended up making this Roasted Beet Salad with Oranges, Goat Cheese and Beet Greens as part of our Sunday night dinner. I just blogged about the salad on Bakin’ and Eggs so check it out!
And now I’ve eaten beets for the last three days in a row and with all the leftover roasted beets in my fridge, there’s no end in sight!
Let’s back up to Sunday. Seems like so long ago but the yum-factor was high that day so I must share.
Behold, banana pancakes from the Original Pancake House. Perfection. An egg over medium and turkey sausage on the side for a protein boost (shared one of the links with Brandon – too greasy!).
Later Sunday afternoon I decided to go for a run. Not just any run, a run in 95 degree heat and blazing sun. Two things got me through my five-mile run. 1) My Fuel Belt. I highly suggest investing in one of these if you run long or run in hot weather. 2) The thought of jumping in the pool at the end of the run. I ran to the YMCA where Brandon was waiting with my suit. Heaven!
I was famished when we got home from the pool but was facing a long prep time for my beet salad. My sweet husband put this awesome plate together for an appetizer while I got to work on my beets.
Dinner was sautéed grouper (Brandon was going to grill it but it was storming), whole wheat couscous with caramelized onions and garlic and the beet salad.
Brandon did not love the beet salad but he did love the grouper. It’s the best fish – awesome flavor and texture!
I taught my early morning BodyPump class on Monday and then came home and made a pot of Apple Cinnamon Oats. Lunch featured beets and leftover grouper.

I had yoga on my mind all day yesterday at work. I really wanted to practice but I’m trying not to use so many classes off my pass this week. My yoga habit is getting expensive! I really just need to start paying a little extra and buying month unlimited passes. While Brandon was at the Y I rolled out my yoga mat in the living room and completed a 60-minute Dave Farmar power yoga podcast. Just the fix I needed.
Dinner was lettuce wraps – finally! They’ve been on the menu for two weeks.
And I may or may not have eaten the rest of the leftover banana pudding from Saturday’s cookout for dessert. 😉
Not much to report today. I had another bowl of Apple Cinnamon Oats for breakfast and another beet-centric lunch.

I’m teaching BodyPump again this evening…and then getting excited because tomorrow is my BIRTHDAY! I’m going to start out the day bright and early at Y2 for a happy birthday to me hot vinyasa class.
And one last bit of exciting news…I ordered a new point and shoot on a complete whim yesterday. Wal-Mart had a fabulous deal on a Nikon so I just went for it! Cannot WAIT to get my new 12-megapixel point and shoot. Yay! 😛
