I really appreciate your encouraging comments on my Butterflies post. I said this in some of my replies but how cool would it be if I could teleport you guys here for a PBR yoga class!?
I had an over-ripe banana that was begging to be made into banana bread so I whipped up a batch of my favorite banana muffins last night.
I love this recipe because it only uses one banana, makes a small batch of six muffins and there is no mixer required. So easy! I made a some modifications this time around…subbed half the flour for whole wheat and cut back on the sugar.
I had to test them out for breakfast this morning. Rewarmed and topped with peanut butter…continuing my recent peanut butter and banana obsession.
I reported for my LAST Saturday of yoga teacher training at the early hour of 7:30 for a super flow practice. Today was an awesome day full of meditation, group chatter, practicing teaching and learning about pivotal poses – things like bird of paradise, titibasana, crow, etc. We talked about how to build a sequence to prepare the body to get into them. Very interesting!
Over the course of the day I had a soy latte from Starbucks and a kombucha. I’m on quite the expensive beverage kick. Yikes!
I had to leave teacher training a little early to get ready for a fun evening activity – a photo shoot! Lululemon is preparing to open their Charlotte retail store in May. Every Lululemon store features photos of their ambassadors in their sport of choice. My photo shoot took place at a local track, since I am first and foremost a runner despite my crazy recent yoginess! ๐
The shoot went really well – I can’t wait to see how the pictures turned out! Meg (the beautiful and talented assistant manager of the store) and I were chatting about our plans for the night and realized that we were both just going to be vegging on the couch so we decided to grab dinner. Next stop, Big Daddy’s!
Hellooooo black bean burger. Big Daddy’s has one of the best veggie burgers in Charlotte and it’s been far too long since I’ve had one! Oh…and I did have a salad to get my veggies in!
The beautiful thing about Big Daddy’s is that they let you build your own side salad. I had mixed greens, carrots, broccoli, avocado, corn, pecans, white cheddar and apples with orange honey mustard.
Imagine my surprise when I arrived home to find this.
My thoughtful and sweet in law’s dropped off a bouquet of flowers to congratulate me on my last weekend of teacher training! ๐
I seriously may cry tomorrow. I can’t believe it’s over.
A photo shoot?! How fun! I’m sure those photos are going to look gorgeous!
