What better way to start this post than with the dessert that brought National Peanut Butter Lovers Day to a close on Thursday?
That would be vanilla ice cream topped with a chopped Reese’s Cup and Trader Joe’s Midnight Moo chocolate syrup. This is seriously the dessert of my dreams. Reese’s Cup Blizzards might be one of my all-time favorite treats and this was very reminiscent of that. And I also have to comment that the TJ’s chocolate syrup is my new favorite. It completely puts Hershey’s to shame!
I practiced yoga this morning and then came home and ate this breakfast. Pumpkin banana oatmeal topped with sunflower seed butter and Crofter’s. Black coffee to wash it all down.
I headed into work after breakfast and taught my first class at Metro! It was an athletic conditioning class and I think that I can safely say that it was challenging enough! I got super busy after class and before I knew it, it was 1:15 and my stomach was growling.
I am so lucky that the gym is only about 2 miles from my house so I can be home in 5 minutes. I came home for lunch to check on Sullie and eat. I sliced some tofu and sprinkled it with Dizzy Pig’s Dizzy Dust and then cooked it in a pan over medium high heat for about 3-4 minutes a side. I made it into a sandwich with mashed avocado, hummus, spinach and pepper jack cheese on Great Harvest Dakota bread. Apples and carrots on the side. I also ate a serving of Trader Joe’s Sweet Potato Tortilla Chips with some hummus while I made lunch.
It’s so weird to have to pack snacks and be taking pictures of food on my desk again. I had this Greek yogurt around 4 p.m. with some hot tea because I planned to get a quick workout in after I finished working. I did 25 minutes on the elliptical and then a quick circuit…
10 box jumps
10 tricep dips off the box
10 lunges with back leg on the box (right and left)
10 pushups with feet on the box
10 bottom half squats
10 crunches on this crazy ab contraption we have
10 stability ball crunches
I did this thee times through and did 15 reps on the last set. It only took about 12 minutes.
I have only eaten meat one time this week (when I had the turkey wrap on Tuesday) and my body was craving it tonight. I was tired of eating food combinations out of bowls and wanted a “real meal” so I picked up dinner from Roasting Company. I ordered the chicken on rice – boneless, skinless rotisserie chicken served over herb rice with jaco sauce and stewed tomatoes with okra, squash casserole and a cornbread muffin.Β This was only half of my takeout box – looking forward to the leftovers!
My Saturday is going to be all about yoga. Usually Saturday is my day off from teaching but I’m subbing the 7:30 and 9:15 classes at the studio. I also signed up for a two-hour master class with my favorite teacher at Charlotte Yoga tomorrow afternoon. Off to plan for class and hydrate for all the sweating I’ll be doing!

i like the scoop neck tank from lululemon. i also like the power y but you’ll have to check it out to see if you think it will give you enough support. another good option is the cool racerback tank paired with a sports bra.

Wow to that dessert. Just wow. And that oatmeal…I’m going to need to open some pumpkin tomorrow I think rather than just my typical banana whipped oats! Enjoy your yoga tomorrow! I have a long run planned but I’m itching to get back to hot yoga asap after two classes this week!!

Hehe you know how bloggers always talk about yogurt messes? I’m totally with you on the icecream messes. nuked chocolate chip cookie + vanilla icecream + a dab of peanut butter is the bomb. Congrats on your first class at Metro! So exciting =)

National Peanut Butter Day is a wonderful day for us nut butter lovers! I received 6 jars of different nut butters from Woodstock and it was “weirdly” perfect timing. Saturdays are the perfect day for yoga and always start my Saturday with 7:30 Hot Vinyasa. It’s a great way to kick off the weekend. Enjoy your Sunday! π
