Hi there! Hope y’all are staying warm. It has been such a wonderful weekend. I have a ton to catch you up on so I’m just going to start with a general food and fitness recap. Then I have all kinds of fun posts coming in the next couple days! It has been such a wonderful weekend.
THE FOOD
Breakfast & Brunch
Banana oatmeal with sunflower seed butter and cranberry sauce.
Maple bacon scones at brunch at Nolen Kitchen this morning. I posted these on Instagram and someone commented, “can you imagine if they added cheddar in there.” THEY DID! These scones were over the top.
And Nolen’s breakfast pita. It’s one of my favorite brunch items in Charlotte. It’s a warm, soft pita with scrambled eggs, oven roasted tomatoes, spinach, big hunks of feta and a cucumber yogurt sauce.
Lunch
Butternut squash soup and salad with mixed greens, beets, pears, goat cheese, avocado and pumpkin seeds. Love pears on salad!
Turkey sandwich on Whole Foods Prairie Bread with cranberry sauce, monterey jack and mixed greens. Another bowl of butternut squash soup and some pear slices.
Soup and salad, round two. This time carrot ginger soup and salad with leftover tofu and lots of other stuff. I so crave soup during the winter!
Dinner
Sriracha lime salmon over spaghetti squash with a side salad topped with an Asian vinaigrette.
I am so obsessed with this salmon. It’s so easy and insanely good. I “mmm” all the way through it.
The only other “dinner” I have to share right now is a wine night with yoga friends where we shared this meat and cheese board.
And I devoured these brussels sprouts.
Treats
A little stop at TCBY on Friday night given that it was 77 degrees here on Friday. (It is now 35 and raining…crazy south!) They had a chocolate mint flavor that made my cup of yogurt!
THE FITNESS
Monday
Yoga by the pool before leaving Zoetry. It was a beautiful, sweaty, self-led practice.
Tuesday
1 mile warm up run on treadmill + CrossFit
3 Rounds for Time
– 7 power cleans
– 7 front squats
-15 push ups
– 15 pull ups
– 30 kettlebell swings
This WOD was brutal and left me sore for three days. It took me a lot longer than I thought it would. Over 20 minutes.
Wednesday
20 minute treadmill run with 10 minutes run and 10 minutes sprint intervals + 60 minute hot vinyasa yoga class
Thursday
CrossFit + 50 GHD sit ups . I wasn’t feeling the WOD that was programmed for Metro because I was still kind of sore in my shoulders from Tuesday. I wanted to do some posterior chain work so I wanted to base my workout on heavy deadlifts. I wanted to row instead of run because I’ve been doing so much treadmill running lately.
So enter the CrossFit benchmark WOD “Diane.”
3 Rounds for Time
– Row 500 meters
– 12 bodyweight deadlifts
– 21 box jumps
This workout REALLY challenged me. I have only been able to do bodyweight deadlifts in workouts in the last couple months. It’s a big milestone for me. I took them pretty slow to focus on form and technique. I really pushed myself on the row. My body felt like jello after this one. Loved it. Took me right at 20 minutes which is slow for this benchmark but I wanted to be careful with the deadlifts.
Friday
3 mile run just to get my body loose and moving. It felt so good!
Saturday
REST
Sunday
90 minute hot yoga class
A great week on the food and fitness front! What was your toughest or best workout last week?
I took an awesome class at Combine training – a lot like CrossFit without the time element. It was fantastic!
So much great food you had! Now I want soup but I’m going on vacation for 2 weeks as of Thursday (yay!) so that won’t be in the cards until I’m back. As for workouts…I solely do CrossFit and this week we did 30 min partner AMRAP of the Bear Complex, partner “DT”, 2 sets of 5 front squats + 10 back squats (!) and today was hang snatch work then 21-15-9 wall balls/burpees with remainder of the 8 min cap max DUs. Let’s just say my legs are SMOKED in a great way! (I really should take a note from you and get to a yoga class once a week…but living in NYC, it’s literally impossible to afford anything else besides my CF membership!)
OMG 30 minute bear complex sounds intense. i love that movement!
What is this magical siracha lime salmon recipe? I looked on your recipe tab but didn’t see it, is there anyway you could share it? 🙂
i’m gonna blog it soon!
I second this notion for the recipe! Sorry, just left another comment about it before reading this. That’s what happens when you try to read at work!
What was in the brussels sprouts?? They look great.
i wish i knew! they were incredible!
Oh that yogurt looks DELICIOUS! I had some yogurt this weekend too only it was 20 degrees and snowing. It won’t stop me! 🙂
Great workouts for the week! I am looking forward to a new workout week already! 🙂 Something about the end of one week and the beginning of another always gets me excite!
love it! i don’t discriminate on eating ice cream based on temperature either. always a good time for it! 🙂
Those scones…drool worthy! I haven’t been out for a good brunch in a long time and haven’t yet in Houston. I need to change this. Always love looking at your eats and glad you had a good weekend! XO
Those biscuits look delicious!
Everything you ate looks very tasty!! Where in Charlotte did you have the meat/cheese plate and Brussels sprouts? Agree about the weather in CLT this weekend!! Good weekend to stay inside under a blanket 🙂
the wine shop on fairview. they have amazing food and great wines. you can pick out a bottle and drink it there.
I NEED to try to make a breakfast pita like that! It sounds and looks delicious, as all your food does!
Those workouts all look intense. I’ve been trying to take a break from high intensity workouts, but some exercises that I’ve been improving on recently are chest to deck push ups, wall-sits, and pistol squats!
I am totally craving eggs with a pita now – that sounds like an amazing combination!
That sirracha lime salmon sounds great and is on my must make list now.
I made the chicken marsala mac & cheese on Thursday night, and we then ate it the next two nights too! It was awesome – I have voted for it multiple times!
thank you so much! so pleased to hear that it turned out well for you.
That breakfast pita looks too good!
I’m having a hard time finding your salmon recipe. Can you please link me to it 🙂 I am dying for a new way to cook salmon. I usually just pour a trader joe’s marinade over top. tasty, yes, but getting old 🙂
can you post the salmon recipe!?
coming soon!
maybe im just not thinking straight but what is a body weight deadlift? im so confused!!
The weight on my bar was my bodyweight!
