Happy Friday!
This time tomorrow afternoon I’ll be practicing yoga on an open air pier in Mexico with this view…
This trip crept up so fast! I can’t believe that I’ll be spending the next week in Mexico on a yoga retreat with many of my close friends and students from Y2 Yoga. We had our first retreat last year and it was such a success we all wanted to do it again this year!
While I will be spending several hours a day writing and working on my book, I did do a little Amazon shopping for some new beach reads. Really excited about all of these!
And before I take off, here’s a look at what I’ve been eating this week.
Breakfast
Banana oatmeal in a peanut butter jar with apple butter.
Overnight oats with bananas and strawberries. I did have a few smoothie breakfasts but threw these two in to switch it up a little.
Lunch
I prepped a few hard-boiled eggs for my salads this week. I needed to switch up the protein a little. Loved this salad with spinach arugula blend, chick peas, avocado, strawberries, dried cranberries, goat cheese and toasted pecans topped with a hard boiled egg.
Another yummy salad with spinach, tofu, artichokes, roasted red peppers, kalamata olives, tomatoes, chick peas and feta. Simply dressed with lemon juice and olive oil.
Desperation egg scramble to use up the contents of the fridge for today’s lunch. Not stellar but got the job done.
Dinner
Chicken over whole wheat couscous with steamed green beans. I had a CPR/First Aid recertification course on Monday night and arrived home starving at 9:30 p.m. I had this prepped and ready in under 15 minutes!
Lamb sliders with harissa, goat cheese and cucumbers at wine night with friends on Wednesday.
Second dinner of an open faced hummus, tofu and avocado sandwich with melted white cheddar. I ate this after book club last night. At book club I ate a salad and lots of cheese and crackers.
Etc.
You know I had to get a smoothie pic in there somewhere. This was actually not a breakfast smoothie but a post-run recovery drink. So thick and delicious with spinach, frozen bananas, coconut milk and protein powder.

You’re meals looked tasty this week! I’m always inspired by what you eat. I do have one favor to ask: when you get back from your trip to Mexico (so jealous btw 🙂 ) wold you be able to do a post on Charlotte for dummies? I am graduating from college next fall and I am planning on moving down there! I would love to hear your input!
