Happy Saturday! It actually feels so weird that it’s the weekend already after having Christmas in the middle of last week. Oh well…I’ll take it! I started my day bright and early at Om Yoga to take and teach. I was hesitant about adding a Saturday morning class to my schedule but I actually love it and look forward to it so much.
I have quite a few non-holiday eats to share with you from the past week. It’s a nice change of pace after a month of Christmas cookies and casseroles.
First, it’s definitely citrus season and I’ve been making my way through plenty of clementines and oranges. I need to get on the grapefruit train too. Yum.
My Viatamix got it’s inaugural use with a green (purple) smoothie. Spinach, blueberries, bananas, mango, pineapple, chia seeds, plain greek yogurt and almond milk.
Here’s a lunch with a salad and a peanut butter, honey and banana sandwich. It’s been so long since I’ve had one of these and it was amazing. Looking at this picture now makes me pretty sure I’m going to repeat this again today for lunch.
This is my favorite lunch of the week. It was a salad with Christmas leftovers. Mixed greens with ham, fresh mozzarella, roasted tomatoes, avocado and pecans with Vidalia onion dressing.
Carrot ginger soup and salad with mixed greens, deli chicken and ham, avocado, dried cranberries, goat cheese, walnuts and balsamic and basil olive oil.
Dinners have been a little more creative. Pork tenderloin with herb roasted potatoes and roasted brocoli.
Seared scallops with crispy prosciutto and sundried tomato wine sauce over parmesan cous cous and sauteed spinach with garlic and lemon.
And finally, a red curry bowl. I wanted something ethnic and not “meat and potatoes” last night so I whipped up a Thai curry. Red coconut curry with mixed veggies, shrimp and chicken over brown rice. Topped with fresh basil, lime and a healthy dose of Sriracha. So good.

That all looks so delicious! Do you have a favorite recipe for roasted potatoes? I’m thinking of making them as a side on New Years day. I recently made your apricot brie chicken with a little spin and loved it…will be posting an adapted recipe on my blog soon.
I remember I was the same way about adding a weekend class when I lived in Madison since it’s just a typical “time off.” But Saturday mornings always draw a big crowd and everyone is usually in such a good mood since it’s the weekend – it was always one of the funnest classes to teach!
That smoothie looks amazing. I need to get back into the habit of making smoothies more often!

Smoothies! Also last night I made lean turkey quinoa meatloaf. Non-holiday foods very much needed this week.
I bought a bag of clementines from Costco yesterday and they’re SO GOOD! I forgot how yummy those little bites of awesomeness are. I had two a handful of mixed nuts before yoga this AM and it was a perfect hold me over until a bigger breakfast. Yeah to a NEW blender! 🙂
