I am a three square meals a day kind of girl. I wasn’t always like this and I won’t even share with you some of the things I considered to be breakfast and lunch in my younger days! ๐
I am also a very scheduled eater. I don’t like to eat breakfast too late for fear I won’t be hungry for lunch. I don’t like to eat lunch too early because I won’t make until dinner (we eat really late!) and I don’t like eating late lunches because I feel gross during evening workouts. Am I crazy enough for you!?
Here’s a look at today’s three square meals.
Breakfast was banana oats in an empty peanut butter jar. I topped it off with some Crofter’s. When I eat oats in a jar I just dump the cooked oats into the jar and eat! It’s fun to scrape the remnants of the jar off with your bites!
Lunch was all about the veggies. Spinach, cherry tomatoes, leftover grilled zucchini, herbed goat cheese and artichokes. Strawberries on the side.
Dinner was an egg scramble with the following…one egg, one egg white, spinach, feta, artichokes, sundried tomatoes and cherry tomatoes. A slice of toasted Great Harvest Dakota on the side.
Wednesday is my “on my own” night for dinner (Brandon usually eats out after bowling league) so it’s usually a random single gal meal like eggs, a salad or pasta!
And lastly, I went to a hot vinyasa class at Y2 tonight and it was just amazing. Celeste was teaching and she is such a great teacher. It was only a one hour class so she warned us at the beginning that she was going to take us straight through and cram in as much as possible. No breaks would be offered but we were welcome to take them when we needed them. I powered through the class only stopping a couple of times for some water. I left class with nothing left to give – my favorite feeling.

I’m definitely an (at least) three square meals person. Since reading Tosca Reno, I’m trying to do 5 smaller meals a day, which keeps me from getting hungry. Although I’m not much of a snacker, if I think about it as a meal instead of a snack, it keeps me from eating too much throughout the day. I love eating every 3 hours!
Lance Peanut Butter crackers and a coke were my favorite breakfast from high school up until about a year ago. I will still eat the crackers occasionally when I am in a bind but prefer something a little more substantial (and healthful) now-a-days.
Jessie – now that you’ve confessed I will too. My senior year of high school my breakfast consisted of Skittles and a Coke many mornings. Looking back now that sounds so gross!!! ๐
I sometimes do the hot oats in the jar as well! Before I accepted overnight oats into my life (I thought they sounded gross before I gave them a chance), that’s what I used to do- dump the hot in the PB jar!
I also just realized that Celeste used to teach at my YMCA when I did Yoga there before, so I have had her before. So far I haven’t had her at Y2, but I look forward to it- she is a good teacher!
I can’t imagine these yoga classes. I’ve practiced Hatha yoga only. Hot tubs and saunas wear me out.
