I’m happy to report that my Tuesday outlook has been much sunnier than my Monday mood. The day started off on a good note when I decided to sleep until 7 a.m. rather than get up in the five o’clock hour to practice yoga. I love yoga, immensely, but right now my practice has taken a back seat to my schedule and I’m really okay with that. I have to cut myself some slack in some areas and it’s okay if I don’t get to practice every day (and I did end up getting to practice a little later on so it was all good!).
I pulled ingredients out of the fridge to make pumpkin oatmeal. Then I put them all back in the fridge and made eggs, toast and fruit instead. On a related note, is anyone interested in a tutorial on my fail-proof egg cooking method? No flipping required!
Then I looked at the coffeemaker and decided on tea instead. Not sure what was up with me this morning. This is all very uncharacteristic of me!
I subbed the morning hot vinyasa class at Y2. I’ve been helping out with it for the past few weeks and it’s been nice to be with the morning crowd. They are a fun group because you can throw anything at them and they are game for it. Today we worked on dropping back to backbends. Backbends are my favorite! Tuesdays are my late nights at Metro and I’m usually here until about 8 p.m. so I don’t come in until 11:30 or noon. It’s nice to be able to have the morning free (although I usually end up doing email/computer work, but from home!). I love my flexible schedule.
It’s been a while since I’ve shared a playlist. This is my playlist from my Sunday morning class (click to make it bigger). I was feeling a little more low-key and less “in the club” and got pretty good feedback on this one. Sometimes I just cannot do Rhianna at 9:15 a.m. on a Sunday. ๐
Okay, back to the food. I trained clients over lunch and then came home for a late lunch around 2 p.m. I was famished but luckily I had a soy latte and a Kind Bar after teaching yoga to hold me over!
I made a panini with apricot preserves, spinach, manchego and tempeh on sourdough. I cooked it in a cast iron skillet with salted butter. Chips, pears and veggies on the side. And then I ate two oatmeal peanut butter chocolate chip cookies. Yep.

I would like to hear your egg cooking method as well – yours always look like perfect over-medium, with no brown! I always break the yolk when I flip mine and then I get mad. ๐

I definitely will try to come by one of your classes sometime and introduce myself. I love yoga and running (and I could use a little body pump too!).

Jen, I’d love your opinion on this if you don’t mind, being a yoga teacher yourself. My studio rarely plays music like that. Is this a personal choice what music to play or does it depend on the studio? My studio typically plays yoga-specific music (which isn’t bad per say) but sometimes I really connect with the type of music you mention here, especially when I’m familiar with the song and lyrics. Any reason other than personal preference, do you think? Would it be rude to recommend something different?

That white plate is genius…I am in the market for some new dishes, and I love plain white….so classy and restaurant-y!!…but that long one makes your food look even MORE appetizing!

Salted butter? Very interesting twist. My hand automatically grabs the unsalted at the store. Do you keep both?
my dad always keeps salted butter so occasionally i will pick some up to have on hand for toast/grilled cheese/cooking but i typically always keep unsalted as my default because it’s more versatile and i can bake with it. there is nothing like toast with salted butter though…mmm!
I’d definitely like to hear about your egg cooking method! I just recently discovered how delicious eggs can be in other forms besides scrambled/fried/omelette so I’m still a bit of a newbie when it comes to cooking them in different ways!

I don’t normally eat eggs, but I find myself craving a more traditional eggs, toast, and bacon breakfast when I have been working out especially hard for a while. I’d love to know how to make a fried egg without flipping!
Wow that tempeh panini looks really good! I just might have to give something like that a try for dinner tonight! What do you suggest is the best way to prepare the tempeh?
amanda – when i use it in sandwiches, i usually just slice it in half and heat it up a bit in the microwave to take the chill off. nothing special!
