Good morning and happy Wednesday!
I am happy to report that after my post yesterday morning about busy days getting in the way of working out that I was able to get in a yoga practice and a 3 mile run on the treadmill. I teach a group private yoga class on Tuesday afternoons and two of the four didn’t attend so I ended up practicing with the other two. I think it was the first time I’ve ever taught and practiced at the same time. I definitely don’t prefer it but it felt good since I was so desperate to practice.
I had a meeting last night at Metro and stayed after to run on the treadmill. I was tempted to bail and go home but when you work in a gym, there’s really no making excuses. Especially when you announce that you might skip cardio and receive instant responses of, “it’s only 25 minutes of your life” and “you won’t regret doing it, you’ll regret skipping it.” Gah, twist my arm! ๐
I had a late breakfast on Tuesday after teaching a 7 a.m. yoga class, teaching an 8 a.m. private and training a client at 9. I knew I couldn’t make it through all of that without a little something in my stomach so I ate half of one of Emily’s Hungry Barsย (grabbed one out of the freezer – they freeze so well!) on the way to the gym. When I got home I made a Greek yogurt bowl with granola, fruit, chia seeds and sunflower butter.
Since I ate breakfast so late, my eating schedule was out of whack yesterday. I ended up not eating lunch until 3:30 when I got home from teaching another yoga class and private. I had to pretty much inhale this before running off to Y2 to teach a power mixed class (my very last Tuesday afternoon class…sad!). Spinach topped with leftover Trader Joe’s Harvest Blend with avocado, hummus and Greek yogurt. Sweet potato tortilla chips on the side.
And finally, a late post-gym dinner of apricot preserves, spinach, tempeh and brie on Great Harvest Whole Grain Goodness. I am on a major tempeh kick right now and craving it. It’s a great vegetarian protein source and I love the texture and flavor. I am planning on doing a whole post about tempeh – nutrition info and preparation – but not today!
My dinner looks kind of small but don’t worry…I finished it off with the last of the banana pudding. I didn’t take a photo because it never actually made it out of the tupperware and into a bowl. ๐

It’s great that you have people to push you to work out when you really don’t feel like it. Where I work, I get a bunch of, “You’re so tiny, why do you work out so much?”, and “You were just at the gym yesterday, go home and rest!” NOT what I need, people.
i used to get that all the time – people thought i was crazy for WANTING to work out every day! ๐
I just tried tempeh for the first time (I was super skeptical…) but it was good! I only had it in sandwich form so I’m excited to see your suggestions.
PS Is a yoga private class just a class a group of friends are in? I’m a newbie to yoga ๐
my yoga privates are either one-on-one clients or small groups – this one is a small work group that does yoga together every week. it’s anyone that wants to schedule more individualized sessions!
I teach classes from 12-1 and 4-6pm today, during BOTH lunch and dinner. and I totally find myself running around and stuffing myself with food.

Do you prefer to run on the treadmill or outside on the road?
outside – 100%!!! it was dark last night though when i finally got a chance to run and i don’t like to run outside if it’s dark, pouring down rain or freezing cold.
I am also looking forward to that tempeh post. I have only had bad experiences with it, but after seeing it on so many blogs and hearing about tempeh bacon, I am willing to give it another try.
Can’t wait to hear how to prep tempeh–for some reason I never get it right. Have a great nightT!
For a second I thought that the tempeh was your second piece of bread and that you melted your cheese on the outside of your sandwich haha. Nope just a gold ol’ open faced sammy ๐
So glad to hear you got some of your own time for yoga and a run. Your schedule is always so packed, I don’t know how you do it – you’re incredible. So excited to hear about how you prep tempeh and your favorite ways to eat it. I’m a vegetarian (but sometimes I eat fish — just only 2or so times a week), and another protein option for me would be great! Look forward to your post! ๐

I am excited to try the tempeh, looks delish! I know you get a lot of veggies, fruits, meats into your daily diet… do you take any particular protein in your diet? I know you make the green shakes.. but do you add any powders? just curious!!
