Happy Monday!
I started my week off with 5:30 and 6:30 a.m. clients before coming home to this cutie. Sullie has a case of the Mondays and is being a little lazy but I am ready go GO! That my be in part thanks to the fact that I’m working on my second grande dark roast. I needed to get out of the house today so I moved my office to Starbucks. The gold card free refills are a blessing and a curse…
I have all kinds of posts coming at you this week…a killer workout, how I’m dealing with jaw clenching/teeth grinding, a gluten-free bread review, a delicious chicken recipe and more. But first, I’m going to catch you up on recent eats.
Before we get to that I want to quickly address something that I’ve received quite a few comments and emails about lately. I have been running in-text ads on my blog for a couple of years now and have never received any negative feedback on them. Recently, there was a glitch with the ad company that was causing the ads to open and block the text with no “x” to close and I received feedback that it was interfering with readability. The ads are down for now while everything gets fixed. Thank you all for letting me know so I could bring it to their attention.
Okay…let’s talk food!
I made myself this omelet on Sunday and it was pretty awesome. Two eggs, sauteed spinach, sauteed tomatoes, roasted hatch chilies, avocado and goat cheese topped with salsa. A fresh peach on the side. Tip on the eggs that I recently learned from a friend…I whisked about a tablespoon or two of 2% plain greek yogurt into them as I was beating and it made them lighter and creamier.
Speaking of hatch chilies…they’re only in season a few weeks out of the year and I stocked up at the store on Sunday.
There has been a lot of this in my life lately. I made the cheese + fig plate and a friend made the most amazing guacamole.
On Friday night I shared this plate with friends at Lulu.
Along with the Lulu Summer Salad which was a combo of mixed greens, apples, strawberries, blueberries, walnuts and fried brie. Yes, fried brie! It was just as delicious as you would imagine it to be. So Friday night I had a salad topped with fried brie and Saturday night a salad topped with fried gnocchi. I like where these restaurants are going with these salads! 🙂
Speaking of Saturday night…this is the risotto that I mentioned in my last post. I am SUCH a sucker for risotto at restaurants and this one was a corn and crab with lots of fresh herbs.
Yes. I have been eating out a ton. Let me show you a couple homemade dinners. This was Sriracha Lime Salmon with sauteed eggplant, red pepper and shisito peppers with soyaki sauce.
I made this for Sunday dinner. It was a honey rosemary chicken breast with roasted tomatoes. Roasted squash and zucchini on the side. I loved this dinner and will be sharing the recipe with you this week. The chicken was so simple but so incredibly fresh and flavorful. Everything on this plate (chicken, rosemary, tomatoes, zucchini, squash) is either from my backyard or the farmers market.
I have also lost count at this point on how many of these I have eaten. Breakfast dessert, lunch dessert, dinner dessert… 😛
But balancing it out with a little of this! I have the fridge stocked with summer fruits…watermelon, peaches, blueberries.

What’s your favorite summer fruit? While I love watermelon, I think I’m going to have to go with peaches for their versatility. I love how they are good on their own but also in ice cream, cobblers, cakes, etc.
I never knew of the glory that is roasted Hatch chiles until I moved to Arizona. Putting them in eggs is a stellar move! I also really need to get my hands on some shishitos. They are one of my “can’t-not-order” foods if I see them on a menu.
Favorite summer fruit is PEACHES! My boyfriend and I ate dinner at my grandparent’s house last week and my Grammy made home-made angel food cake topped with berries and peaches for dessert. The peaches were life-changing.
that cake + peach combo sounds incredible…especially being homemade by your grandmother.
All those meals look amazing! My favorite summer fruit is raspberries. I also love the combination of raspberries and peaches together….
CHERRIES are my favorite summer fruit! But it is so hard to find good ones!

Jen, I made the chocolate chip toffee bars for my boyfriend’s mom last night. My BF tested them for me and said they were delicious!! I think next time I will add more toffee bits. Other than that one change, the recipe is a keeper. Thank you for sharing!

I am torn, I love peaches and watermelon, but berries are so delicious and versatile. Oh beautiful fruit!
Looking forward to hearing how you deal with jaw clenching. I don’t think I grind, but I definitely have a tight jaw, my dentist says I have the jaw of an 80yr old.
