Happy Sunday!
I was in the process of editing all of my recent food photos (including vacation) when I realized that breakfast needed a post of its own. It’s been really good lately! As most of you know, I’m a pretty repetitive breakfast eater and I don’t lean towards savory very often when it comes to the first meal of the day. I’ve shared in the past that I struggle with finding eggs to be an appealing choice first thing in the morning but that finally seems to be shifting and I’ve eaten eggs every morning for a week now!
My breakfasts have felt really well rounded and have kept me full through lunch. Here’s a recap of how I’ve been starting my days on the food front.
Post-run breakfast…two egg omelet with mushrooms, zucchini and heirloom tomatoes, sliced avocado and fresh fruit.
First day of vacation breakfast part one. Coconut peanut butter banana bread topped with butter along with some grapes, coffee and water.
First day of vacation breakfast part two. Two eggs, half of a banana with cashew butter and second cup of coffee.
Mashed sweet potatoes with banana and coconut milk topped with cashew butter and served with two scrambled eggs.
Coconut peanut butter banana bread topped with cardamom chia cashew butter along with two scrambled eggs and grapes.
Two slices of uncured applewood smoked bacon, two scrambled eggs, a slice of sourdough toast with butter and jam and watermelon.
Mashed sweet potatoes and bananas with coconut milk and topped with cashew butter, a slice of bacon and two fried eggs.
And finally, Sunday brunch was fluffy dairy-free blueberry pancakes (recipe soon!) along with a fried egg and fresh farmers market fruit.
I’m liking this new direction that breakfast is taking! 🙂

Eggs first thing in the morning…yes or no?
Favorite way to eat your eggs? I love them scrambled with just a little salt and butter in the skillet.
I have the same breakfast almost every morning! One egg + one egg white scrambled w hot sauce and then Kodiak protein pancakes with a drizzle of syrup! I find it’s the perfect combo of macros to kickstart my day and satisfies my savory and sweet tooth.
I have never tried Kodiak cakes or any protein pancakes!
I’m pretty stubborn with sticking to only sweet breakfasts at home, but these sweet and savory breakfasts look so tantalizing! I might just have to up my breakfast game too. My favorite way to eat eggs is sunny side up (over avocado toast preferably).
I’m with you on the sweet breakfasts. So tough to switch it up! And yes, that avo toast + drippy egg combo is GOOD!
I have never been a savory breakfast eater! I can’t eat eggs in the morning unless they are scrambled into oatmeal and made into pancakes but your breakfast ideas look so good that part of me wants to try switching it up. I don’t know that I can do it!
I have had such a hard time but I’m finally getting somewhere in the middle with sweet/savory.
Oh my gosh, these breakfasts!!! Drooling over here! Lately I’ve been having oatmeal topped with apple and nut butter or toast, nut butter, banana, and turkey bacon. With the school year right around the corner, I want to up my breakfast game and soak up the last bit of extra morning time to make more creative meals. I used to eat eggs every day for breakfast, but then I got sick of it. It’s been a while and your breakfasts looked so amazing, so I think it may be time to bring the eggs back.

Meah – I hear you on eating the same thing over and over at breakfast and getting sick of it. I’m so guilty of that!
I have been making lots of protein pancakes, smoothies, and chia pudding! If I am going out for brunch I always like a good omelette, but if I am making eggs at home I like them sunny side up…I like to dip toast in the eggs. That drippy egg is the BEST!

Eggs always, there’s never a morning where I’m not up for eggs. I lean way more toward savory for breakfast, it’s rare that I want anything sweet in the morning unless I’m craving pancakes. When that craving hits, though, nothing but pancakes will do! Looking forward to the recipe coming soon.

I need to keep leaning away from the sweet breakfast side. I’m just such a natural sweet tooth…it’s hard!
I have the same thing almost every day. Two boiled eggs and a piece of toast with peanut butter. For some reason I find boiled eggs keep me fuller than scrambled. No idea why!
So interesting! I like hard boiled eggs but scrambled is my go-to for breakfast.
Yes to eggs in the morning – my friend started raising chickens in her backyard and every Monday I pick up a dozen fresh eggs from her. What a difference fresh eggs make. This morning I had them scrambled with some boursin cheese and some butter and salt. The boursin cheese made them really fluffy and creamy.
Oh that is AWESOME! Love super local eggs.
Ever since doing Whole30 I’ve eaten eggs almost every day for breakfast – so long oatmeal! I’ve been trying to eat less fruit and more healthy fats and find it makes me feel so much better throughout the day.
I could stand to work on the less fruit thing but baby steps…at least I’m getting on the egg train now!
