I think this photo sums up my week.
That would be the passenger seat of my car. Yes, I’m living out of it – vagabond style. Makeup, clothes, camera, various jackets, cell phone chargers…it’s all there. While this week has been stressful and busy, it’s the exciting kind of stressful and busy. Everything has been going so well at the new location. Our preview week classes have been packed and we’ve been receiving great feedback on classes, coaches and the facility.
We had a big group from Lululemon in to try the 7 a.m. class. I couldn’t get over how cute and colorful they were! 😉
I packed breakfast to eat at my desk after class. I made overnight oats for the first time in weeks and just happened to have an empty peanut butter jar on hand. Lots of black coffee to wash it down.
I actually got to teach the noon class today and that was so fun for me. I’ve been so busy with all the backend stuff that I haven’t been able to jump in and help out with coaching. I can’t wait for things to slow down a bit so I can get on the schedule to teach more.
I got creative with what little I had in the fridge today. I sautéed white beans, zucchini, tomatoes, squash and tomatoes and then added in basil, spinach and an egg to the mixture. I topped it with parmesan and avocado. Cherries on the side.
I didn’t get home until 8:45 tonight but I was determined to make a real dinner. I sautéed a pre-marinated chicken breast from a specialty market, roasted okra and cooked some of the Trader Joe’s Harvest Blend. It totally hit the spot.
My friend Diane attended my noon class and brought me cupcakes as a congratulations/early birthday treat. I had half of the peanut butter cup cupcake after lunch and I plan on devouring the second half any minute now!
Hope it’s been a good week!
I read your blog daily but rarely comment due to the fact that my phone is such a pain to type with. I just wanted to congratulate you and say thank you for being such a big inspiration! Im a stay at home mother to a 2 year old and am due this summer with another little one and its very easy to find reasons why I dont have time to excersise, but reading your posts gets me motivated. Thank you again!
Happy Early Birthday! And yes I sometimes find myself living out of my car as well!
I could never posses the self-control needed to only eat half a cupcake!
Love the car! Mine looks like that way too often! Congrats on your first week open, looks like it’s been a success!
Hey! It was nice to meet you! I was so glad I happened to attend the class you were teaching. It was great! Thanks again!

Roasted okra is my fav! And that cupcake looks phenomenal – would have never been able to only eat half!
Happy Birthday Weekend! Good luck tomorrow on the mud run! I did the Warrior Dash last month and although it was totally out of my element, I loved it!

Being busy can be SUCH a good thing…I love it when I am busy doing the things I am passionate about! And it looks like that is happening to you! Which is awesome.
I haven’t done a mud run yet but they look like so much fun!
Busy busy lady! So happy you are pleased with the progress of everything! And congrats again on the opening and clearly off the success that has come out of it so far!! You are still managing to eat delicious food I can see! 🙂 Have a great birthday weekend!
