One day I’m practicing ashtanga poolside with the sun beating down on me and the next day I’m running outside with snow blowing in my face. Vacation is officially over. What a wake up call!
I’ve jumped right back into my normal routine. Saturday morning started with peanut butter toast, espresso and CrossFit. I actually went 7 whole days without eating peanut butter while I was gone…and didn’t miss it too much actually. I mean, how could you when there are warm croissants and fruit presented to you every morning instead?
Lunch at Whole Foods Saturday after taking yoga and before teaching a class. I was a little overly excited to discover they had sweet potato biscuits. I love them and haven’t seen them on the bar in forever.
I spent the afternoon cooking and baking. Given that we had snow flurries on and off all day, I thought it would be the perfect time to make one last batch of chili for this season. I made this Butternut Squash and Bean Vegetarian Chili.
I baked these Oatmeal Butterscotch Bars with Brown Sugar Glaze to take to my Sunday morning yogis as a treat since I left them last week. I added shredded coconut and chocolate chips to the recipe. They aren’t my favorite thing I’ve ever baked but they are pretty good.
I picked up this furry thing and gave her a bath. So any excitement she had over seeing me was quickly forgotten after I tortured her with a bath.

Too funny! Just got back from buying groceries and picked up necessary ingredients for your butternut squash chili! It’s my 3rd time making it now and we love it! I am doubling the recipe as we freeze portions for lunches. I’ve also passed this recipe on to several friends and they love it too! Thanks…and keep posting such recipes!

Sullie is SO adorable. It’s funny because my Golden absolutely loves the bath. He walks in the tub before I even tell him to. Go figure!
aw, sullie loves the water and swimming but just hates baths for some reason. so sweet your pup loves them! 🙂

Do you usually board Sullie? Asking because I’m boarding my 2 dogs for the first time next week and was wondering how Sullie likes it? Does she get depressed?
i try really hard not to board her unless absolutely necessary. it’s been years since i have. i usually leave her with friends or family or have someone house sit. i’ve been known to drive her hours away to my parents if i’m leaving for a whole week just to avoid boarding her. i know it’s crazy but i just don’t love to do it.
That sugar glaze looks yummy. I am going to be baking up a storm this week, because I’m going hiking this weekend & figure it will be nice to give everyone a sugar rush to push us further 😉

Just pinned both of the recipes! I love making a big pot of soup and enjoying the leftovers all week, and I’m also trying to cut down on my meat consumption, so the chili is perfect! Also love the idea of the glaze on the butterscotch bars.
And no missing peanut butter?! Blasphemy! 😉
the soup leftovers are the best! they always reheat so well. definitely suggest trying this recipe if you are looking for meatless ideas. it’s awesome.
WOW, don’t think I could even last two days without peanut butter without starting to go through withdrawal 🙂 Although I guess it’s understandable if you’ve got such an amazing spread to choose from.

It is so hard to come back from vaca!!! Good thing you have such an adorable puppy to come home to 🙂 I am jealous! That soup looks amazing! I also can’t wait for the re-cap…don’t be afraid to post a ton of pictures! I will have to live vicariously through them 🙂

What a great way to spend a Sunday…baking away 🙂 Those oatmeal bars look delicious! Call me crazy, but as much as I love to cook/bake, I have never taken a treat to my class!! Am I a bad instructor?! I think I need to bake them a treat ASAP!
i actually always feel really guilty for baking and taking it to the gym and yoga because i tend to NOT bake healthy but everyone always seems to love what i bring and it disappears! 🙂
