Weekend in photos…
Friday night in. Easy and healthy dinner of lemon pepper pan seared chicken breasts, black quinoa and sauteed brussels sprouts with lemon, dijon, sliced almonds and cheese.
Post-long run beverages. I dreamed about a gingery green juice and french pressed the whole time we were running.
Long run recovery meal. Tuna avocado salad from the cafe at Y2 after teaching. This salad is the stuff my dreams are made of. It’s amazingly fresh and flavorful.
And chicken fingers from the mini yogis menu. I’m not a chicken fingers kinda girl but these are so good. They’re done with chicken breasts and a house-made seasoning and gluten-free breading mix.
Random meal but hit the spot! 🙂
It was a crazy beautiful day in Charlotte on Saturday so we walked the girls to the park in our neighborhood where they had an entire soccer field to themselves. They had such a good time lounging in the sun and chasing balls.
We went to see The Martian on Saturday night. I was hesitant because it’s 2 hours and 20 minutes long and I get so antsy sitting that long but I’m so glad we went. It was wonderful! I loved the mix of drama and humor and both the acting and the story were great.
We had a late dinner at the bar at Foxcroft Wine Co. after the movie. We shared the beef sliders.
And a salad with mixed greens, tomatoes, fresh mozz, hazelnuts, basil vinaigrette and duck confit. The food at Foxcroft Wine Co. is so reasonably priced and so good!
Sunday morning juicing. I am on a juicing kick right now. Apples, kale, carrots, beets, ginger and lime.
Sunday brunch. Omelet with spinach, cheddar, mushrooms and avocado with buttered brioche toast on the side.
One of my yoga students (who I have come to develop a special relationship with) surprised me on Sunday morning by dropping off a loaf of homemade brioche for me.
And these cookies! Holy cow! They are peanut butter chocolate chip with bacon and salted caramel. Am I lucky or what? YUM!
My Sunday afternoon was work, work, work. I taught Total Strength at the Y, yoga at 4 and then commenced a painting project that stretched past 10 p.m.
We decided to paint the beige studio walls green. It’s the color of the heart chakra.

So I’ll just leave it that four hours of painting in a 100 degree room might be harder than hot yoga. We were drenched in sweat and covered in paint by the end of the night but it was worth it. Paint can absolutely transform a space.
I came home, showered and ate this bowl of leftovers before crashing. I slept like a rock!

your skin and white teeth, ahhh so pretty. i know you’ve talked a lot about your skin care regime, but have you talked about your pearly whites? 🙂
Haha! Okay, never had braces so they’re naturally pretty straight but I don’t have great teeth from cavity prone standpoint. Regarding the whitening…my dentist did a custom tray fitted for my teeth with a whitening gel that I use time to time.
Took a class at the studio today and the paint job looks great! Very soothing and calming indeed ?

It’s was delicious. The sushi chef we have at the studio is seriously amazing!
We took a day trip to Charleston and saw some fall color from the air on the way out of town! Lots of fun.

It was a cold and rainy weekend in Chicago so we kept things pretty low key! I ran into my neighbor and she had been having a rough week so I baked her up some oatmeal chocolate chip cookies (with rolos in the middle)!
Yum!! Those sound amazing. That had to have brightened her day!
hi…please share the brand of GF breading ! do you bake or fry ? i’ve only had chicken tenders in the past 4 years that are “breaded” with cornflake crumbs in the oven. i like those but the ones in your pic look sooooo good !
