Why do the weekend pass so quickly? It was a beautiful 75 degrees here in Charlotte on Saturday and Sunday. The kind of weather that makes you smile and take a deep breath when you feel the sun on your face. Here’s my weekend in photos.
Friday night furniture building party with chicken parm, roasted broccoli and brown rice pasta. I haven’t made chicken parm in forever and this was awesome.
I trained a client, hung out at Metro CrossFit and taught yoga on Saturday morning.
Lunch after was a meatless burrito bowl. Brown rice, black beans, tomatoes, green peppers, avocado, Greek yogurt, green salsa and lime juice.

I saw Identity Thief on Saturday night. I was really hoping that it would be really funny but it was just okay. There were a few funny parts but I wouldn’t recommend that anyone see it in theaters. Maybe on DVD. I do want to see Side Effets though – has anyone seen that? Thoughts?
Wine and apps after the movie. I swear that I could live off of meat and cheese plates.
I really could have this for dinner every night. It’s so relaxing to just hang out and snack.
Sunday breakfast before teaching yoga was lots of black coffee and a smoothie. I am SO on this breakfast smoothie kick right now and loving it. Banana, blueberries, mango, protein powder, almond milk and chard. Yummy.
Lunch after teaching “yoga church” (Sunday morning hot class) was a bowl of salad randomness at Whole Foods with friends. I won’t even begin to try to describe everything pictured here.
I went for a (colorful) run this afternoon, trained a client and purchased new bedding at West Elm. I can’t wait to show you the finished look for the bed. I love it!!!
On a less excited note, my runs this weekend were less than stellar even with the awesome weather. I had to stop and walk several times during my runs on Saturday and Sunday. And I tried to do CrossFit Open Workout 13.2 today and fell short of my goal. More to come on that soon.
I was STARVING for dinner tonight. I sauteed chicken with Trader Joe’s lemon pepper grinder and sea salt and the topped it with a mix of artichokes, sundried tomatoes and mushrooms that I made a sauce out of with chicken stock and lemon juice.
I actually did a real shopping trip at Whole Foods today with a menu for the week so stay tuned…I have Chili Lime Tilapia, Thai Eggplant Tofu Coconut Curry and Tomato Garlic Pot Roast coming at you.
How was your St. Patty’s Day weekend? I didn’t drink any green beer or eat any corned beef. Sad!

The newer bullet, the nutribullet, makes fabulous smoothies! I’ve made one almost every day since getting it…and of course clean-up is a breeze. And I’m totally stealing the blueberry-mango-banana idea for mine today, thanks Jen!
i don’t have any kind of fancy blender. just a standard cuisinart but it gets the job done well!

Side Effects was entertaining, but I wouldnt hurry to see it in theaters. It left me thinking about it for a few hours after, but in a disturbing way. It’s kind of messed up!

u know…i love your cooking. i love how you just throw stuff together. i need to cook more like that. it seems like you throw in whatever veggies you have into things like egg scrambles, chicken dishes, salads, etc in such different ways than i ever think of ! keep it coming…u are inspiring me !
thanks tara! i used to be a lot better about planning actual meals and recipes but now i just keep a stock of basics that i know i can create meals around and wing it.
No green beer and no corned beef, but I think my liver and stomach are probably thanking me! I did do delicious take out, wine, and The Notebook on Saturday night. It was a cold and grey weekend here in NJ, so it was a great night with lots of tears. HA! Loved that move…so jealous you were able to run in that. I’m still bundled up here. No warm temps in sight. 🙁
