Happy Sunday everyone! I’ve had a really relaxing and low-key solo weekend.
I watched Where The Crawdads Sing, spent lots of QT with the pups, got to the gym to lift on Friday and Saturday, had a massage, watched the UGA/Kentucky game and attended the loveliest chakra light and sound bath. Overall, a very much needed self-care weekend.
I also shopped for a Thanksgiving meal to donate to the Charlotte Rescue Mission. They collect these boxes of ready-to-go Thanksgiving meals to distribute to local non-profits and Title 1 schools. They had an urgent need this year totaling over 4,500 boxes due to not receiving support they usually get from a local grocery chain.
I wish I could have organized a big donation drop off for my Charlotte-area readers but this all happened a little last-minute through a Facebook friend. If they have this big need again next year, I will put something together.
The rest of this post will be a round up of meals I’ve been eating over the last few weeks.
BREAKFAST
Plain greek yogurt, Purely Elizabeth Pumpkin Spice Granola, dried berry mix, roasted and salted pecans, bananas, almond butter with cashew and maple.
Toasted Harvest bagel from ALDI and cottage cheese scrambled eggs. The bagels are a seasonal specialty item and have cranberries, whole wheat flour, ancient grains and seeds. I really like them!
Acai bowl from Southern Pressed Juicery. It’s rare that I eat breakfast out but I trained a client at 6a and then took a yoga class at 7 and had a window before I taught at 9:30a.
LUNCH
Salad with chopped romaine, avocado, carrots, hardboiled egg, ham, pepitas, queso fresco and ranch dressing made from the Trader Joe’s ranch seasoning blend.
Avocado toast on Verdant Bread’s whole wheat sourdough Pullman loaf, hardboiled eggs and sliced apples.
Salad with chopped romaine, cherry tomatoes, avocado, pepitas, queso fresco, carrots, air fried Trader Joe’s gluten-free chicken breast nuggets and the same homemade ranch dressing.
Toasted whole wheat sourdough with salted butter, cream cheese, mashed avocado, smoked salmon and hemp hearts. Sun Chips and grapes on the side.
Salad with massaged green curly kale, watermelon radish, carrots, red pepper, pistachios, dried cranberries, avocado and herbed goat cheese. Finished with olive oil and aged balsamic.
The same toasted Verdant Bread with salted butter and mashed avocado and a bowl of carrot and sweet potato soup with lots of fresh ginger and coconut milk.
Another kale salad – this one add turkey and white beans!
Homemade veggie soup made by our nanny on a day I was feeling under the weather (she’s the best EVER) and butter toasted whole wheat sourdough.
Quinoa bowl with air fried falafel, sautéed spinach and arugula, avocado, sliced cherry tomatoes, tzatizki, hummus, feta and a fried egg.
Broccoli cheese quiche, avocado and grapes.
DINNER
Brined bone-in pork chop that I seared on my Le Creuset grill pan and finished in a 400 degree oven. Served with roasted acorn squash and my braised red cabbage with apples.
Broccoli quiche – similar to this recipe but I blind baked the crust and then used a mixture of half and half and cottage cheese in the filling. Also, I used shredded gouda for my cheese. I’ve eaten this every day for lunch the last few days. I love quiche so much!
These two ingredients came together to make a super delicious dinner! I’ve tried two Kevin’s chicken dishes but this was my first beef. I will definitely be buying it again. The teriyaki style beef was so flavorful and so tender.
I steamed the veggies in the bag and then added them to the skillet with the beef. I served it over brown rice and added a drizzle of sriracha.
Looks a mess, tastes delicious! This was fall-shaped pasta from ALDI with Trader Joe’s frozen mushroom medley, Trader Joe’s Autumn Harvest pasta sauce, green peas, sautéed chicken sausage and parmesan cheese.
Similar but sub red jarred pesto from ALDI for the pasta sauce and Trader Joe’s refrigerated chicken meatballs.
Steamed basmati rice with sautéed chicken sausage and ALDI ready to roast Mediterranean vegetables. Topped with hummus, tzatziki and parmesan cheese.
Loaded baked potato with butter, shredded cheese, cottage cheese and frozen veggies.
Salad with baby spinach and arugula, chopped broccoli, roasted and salted pecans, feta, avocado, carrots and air fried Trader Joe’s gluten-free chicken breast nuggets tossed in buffalo sauce. Dressed with a mix of TJs cilantro dressing and ranch.

I subbed the Wednesday night 8:15p candlelight class at Charlotte Yoga again this week so I popped into Amelie’s before class to get a dessert to eat when I got home. I ate about half of this (it was rich and it was late!) with some relaxation tea and it was off to bed. 🙂
Liking this new Gatorade Fit! We’re selling it at the gym so I tried a bottle there and then bought some on sale at Target.
That’s a wrap for me today! I am going to get showered and dressed and then it’s off to pick up my boy. Cannot wait to see his sweet face. <3
