Well, I didn’t get lost in the madness that is Ikea. Actually, I totally recommend Friday night as an ideal time to visit Ikea. It was the least crazy I have ever seen the store.
I did come home with a shiny new desk and chair and I have my first real home office ever! Bonus, I have an uber awesome technology set up with a 27 inch Apple Thunderbolt Display to dock my Mac Book and dual monitors (something I always loved in my ad days). I’m going to be working from home more moving forward (more details to come on that later this week or next) so this is perfect!
I didn’t leave Ikea until after 6:30 so I swung by the grocery on my way home. Wine and cheese were necessary to regroup from that overwhelming experience and the task of assembling the Ikea furniture.
I was at a loss for what to make for dinner so I browsed Pinterest on my mobile for inspiration. I came across the famous maple dijon chicken and decided to finally give it a try. This recipe has been Pinned ad nauseam so I thought it deserved a try. The verdict? Eh, not mind blowingly amazing but okay. I’m not sure that I’ll make it again anytime soon. My favorite go-to chicken is still Ina’s Lemon Chicken. That said, I put my own spin on it by seasoning it well, adding garlic and mushrooms. I served it over spaghetti squash to soak up the sauce.
I had to work at Metro CrossFit on Saturday morning. I co-taught the 8 and 10 a.m. classes and then hit up the farmers market. I mostly bought local meats and eggs and passed on most of the veggies. It’s very greens heavy right now and I overdosed on greens last week when I had spinach, kale, rainbow chard and beet greens. Lunch after the market was a salad from the fridge. Mixed greens, arugula, roasted beets, apples, edamame, pumpkin seeds, farro, feta, dried cranberries, avocado and homemade balsamic vinaigrette.
I spent Saturday afternoon working around the house, napping and perfecting the apple bundt cake recipe. I am so excited about how it turned out on this test and cannot wait to share the recipe!
I made a quick trip to the gym around 7 and did the following quick and high intensity workout:
2 miles on the treadmill – first mile warm up, second mile sprint intervals
Circuit…
25 box jumps
25 kettlebell swings
25 ab mat sit ups
25 kettlebell sumo deadlift high pull
25 double unders
I was gasping for breath when this was over. I packed a lot of punch in under 30 minutes. I hopped on the pull up bar afterwards to check my status and was thrilled that I could do THREE dead hang pull ups in a row! I had only ever been able to do one before!

You know what? I really miss having a desk top computer. I mean the lap top is great… but I honestly think I work better at a “work station.” This makes me want to set up shop!!
I LOVE when I can work from home. I always feel so much more productive. I love the freedom of walking around in whatever I want, preparing my meals, and just getting stuff DONE. Glad Ikea wasn’t too painful. I hit up Costco on Friday afternoon. Good time to go there as well. 😉
Thanks for sharing your desk setup! I need/want to do the same. I don’t think I can afford a Thunderbolt right now but I’m hoping I can hook my MacBook Pro up to a regular large monitor.
I am never good at working from home, but the only times I have ever been able to productively and consistently is when I have space set aside for me to work in and an area that I am happy in 🙂
Also I LOVE those prints hanging on the wall. Do you mind me asking where you got them?? I am looking to buy some artwork and those would be incredible!
