Good morning! Holiday weekend is over and time to get back in the swing of things. My day kicked off bright and early with 5:30 and 6:30 a.m. training clients. As I mentioned last week, I am training one of my friends who is in her third trimester. She is still rocking it in the gym and it’s so inspiring to see her showing up at 5:30 a.m. and feeling so good. I absolutely LOVE training pre and postnatal clients. It is so special to work with women through the changes in their bodies and to help them feel empowered, strong and confident.
So before we get fully in the swing of the new week, let’s take a step back and I’ll share some photos from my very uneventful July Fourth weekend.
First, I taught a lot of yoga. I taught two classes on July Fourth, two on Saturday and one on Sunday. My message in my classes over the weekend were themed around freedom. My favorite quote came from this Tiny Buddha post about finding freedom.
“True freedom doesn’t come in the future, from a situation, or “from” anything at all, but is within you right now.”
I ended my weekend with a yoga practice. I haven’t been making it to my mat very often lately but couldn’t resist a Grace Morales class when it was announced she was subbing one day only at Charlotte Yoga. The room was packed, the energy was great and I was a sweaty mess. Grace doesn’t teach regularly these days so when there is a special chance to catch her, I jump on it.
I spent a lot of time at a friend’s pool. She prepared so much food for July 4 that we came over again on July 5 to continue the party! I got a lot of sun this weekend.
All of the food was super fresh, healthy and delicious. I enjoyed this pear and avocado salad with salmon and roasted veggies poolside. (And then a homemade chocolate chip cookie ice cream sandwich late night!)
It’s South Caroline peach season! I know I grew up in Georgia but I gotta admit that I love some SC peaches! I picked up a big basket and am currently brainstorming ideas for how I want to use them other than eating them straight up. Some thoughts that have come to mind are cobbler or crisp and homemade ice cream. Let me know if you have any other must try suggestions.
Speaking of summer things, I have been all about tomato sandwich lunches with fresh fruit on the side.
The best part of the weekend was the incredible weather. The humidity was unseasonably low, we received a break from daily afternoon showers and enjoyed abundant sunshine and beautiful sunsets. I went running Saturday night and Sunday morning because the weather was just too perfect. I also took Sullie for a long walk on Sunday evening to wind down the weekend and soak up the fresh air. I think summer nights are my absolute favorite time of the year.
One last fun thing…thanks to Spry Living for featuring Peanut Butter Runner as one of the 7 health bloggers they love!
What was the best cookout food you ate over the weekend?
Did you get any holiday weekend workouts in?
What is your favorite recipe for fresh peaches (other than just eating them!)?
I love grilled peaches! Delicious in a salad, sandwich or topped with a little honey and cinnamon for dessert (:
peach cobbler is a southern classic! looks like you had an awesome weekend. i’m inspired to do more yoga!
i just saw this in a magazine: mini peach pies made in a muffin tins – peel and cut peaches in half, remove pit. line each muffin cup with a circle of pie crust, place one half of peach in each. sprinkle with sugar, dap of butter if desired. add top crust and bake til done. seems super easy!!
LOVE peaches. Yes to grilled, with a scoop of vanilla ice cream! I also enjoy juicy ones blended up in a smoothie with Vanilla protein powder and greens! I’ve also made some delicious bellinis with homemade peach puree. Yum yum yum.
I got two early morning runs in this weekend before beach lounging time. In fact, one run was on the boardwalk where I spotted the early Sunday morning yoga group on the beach. I need to figure out how to get in on that one of these weekends.
I’ve been eating a lot of fruit or tomatoes with ricotta, lemon zest, and herbs on top of toasted sourdough. For fruit, a drizzle of honey is a really nice touch! Or you could try balsamic.
that sounds AMAZING! i just bought some new aged balsamic that would be awesome in that combo.
These sound great! Peach caprese salads are also great!
YUM! All that food looks so delicious! Glad you had a great weekend.
try peaches with mozzarella, basil and balsamic glaze 🙂 stole this idea from “How Sweet Eats” and its so scrum!
Thanks for the workout shout out! I know I wouldn’t be feeling half as good as I am without my amazing trainer!!
Try peaches grilled on a salad with blue cheese and arugula. YUM! I had lots of good food this weekend- my favorite meal was a NY strip steak with roasted butternut squash, new potatoes, and asparagus. On Fri and Sat since the weather was SO gorgeous I did over an hour each day of vinyasa flow on the back patio with the fan on- lovely.
Mmm I love grilled peaches with some balsamic vinegar drizzled on top!
those fresh peaches look incredible, as does the bread on your tomato sandwich — what type is it?
yes to weekend workouts — a 28 mile bike ride + 3.75 mile run, all the cardio 🙂
What a fun weekend! I spent the weekend in Jacksonville Beach and am really paying for the fun I had today. I definitely can’t hang like I used to and your weekend definitely looks like the kind I wish I had had. Hindsight is 20/20, I guess! 🙂
Also, if you slice up peaches, rub a little brown sugar on them, wrap them in foil and grill them, they are fantastic with some vanilla ice cream!
Best cookout food: NY strip steaks and jalapeno-cheddar pork meatballs cooked on a campfire! Workouts: noon WOD on Thursday (my long weekend started after 4 hours of work at the office) for 5×5 back squats and PRing my weighted pullup (20# weight vest for 2×3!) and then a 1.5-mile steep hike in Shenandoah Valley on Saturday. I’ve never grilled peaches, but I absolutely would – sounds incredibly delicious. Glad you had such a relaxing weekend! 🙂
My favorite recipe right now with fresh peaches is my recipe for overnight oats with peaches! Eating some right now 🙂 The recipe is on my blog!
