Happiest of Mondays to you guys! I hope you enjoyed the weekend and are feeling energized by all the possibilities for this week that is ahead of us. 🙂
Here’s a weekend recap!
FRIDAY
I am so happy that it’s staying light longer because I can get back to my Friday evening strolls with my two favorite girls. I teach from 4:30-5:30 on Fridays and one of my favorite ways to unwind from the week is to take the girls for a long walk when I get home from class. It’s so much more relaxing than trying to fit it in along with all the other work I need to get done before class. We walked just under 3 miles on Friday night.
And then I spent nearly an hour in the bath soaking and reading. I’m just about done with this book and have really enjoyed it. Notice my velcro dog. I can’t go anywhere in the house without her. She lies right next to the bathtub while I’m in there. 🙂
This was a teacher training weekend (weekend 6 of 8!) and Tanner’s mom is participating in this training so she stayed at our house this weekend. They go until 9 on Friday nights (I don’t lead on Fridays) so I made an easy dinner of Pinch of Yum’s golden soup and a chopped Asian salad from Earthbound Organics that I added avocado and tomatoes to. It was a great light dinner since we ate so late.
These organic flaky biscuits from Immaculate Baking are the BEST! I get them at Whole Foods.
SATURDAY
I was so tired on Saturday morning so I slept in until about 8 and then enjoyed a leisurely, slow morning before heading to the studio to teach at 11:15 a.m.
I went to Metro after class to get a strength workout in. Felt good to lift but I was so sore yesterday and today. That second day soreness is real!
Back at home I made a salad with arugula, canned wild Alaskan salmon, pears, strawberries, pistachios, avocados, feta and dried cranberries. I used a balsamic vinaigrette on top.
My afternoon was spent at the studio leading a section of teacher training. I taught them arm balances and inversions with a ton of focus on mobility and strength for handstands. It was fun…although I can hardly demo anything these days!
Everyone was wiped out on Saturday night so we ordered Thai Taste via Postmates.
YUM Thai food! We had green curry, chicken dumplings, summer rolls and pad thai. After dinner Tanner and his mom watched Jumanji while I did fun things like update my baby registries and pick out bedding for the nursery!
SUNDAY
My breakfast was a fried egg with half of a cinnamon raisin bagel with cream cheese and butter. Grapefruit on the side.
I worked on finishing up my prenatal yoga post before going to teach prenatal yoga at 11:15.
Lunch when I got back home was another salad (I’m doing great with veggies lately!). This one was arugula that I tossed with a lemon tahini vinaigrette that I whipped up. Salad toppings were mixed nuts, turkey, avocado, feta, dried cranberries and pears.
And then I had a carrot cake cupcake from Whole Foods that was a bit of a let down. Whoever baked them tried to hide the fact that they sunk in in the middle with tons of icing. The result was a cupcake that was a center full of icing and kind of mush for the cake part. It was weird.
After lunch, I walked the girls and then went back to the studio to lead a section of teacher training and then to teach my 4:30 p.m. class. I stopped by the grocery on my way home.
And then wrapped up my weekend with a very chill Sunday night and one of my favorite dinners ever! I made corned beef and cabbage…and had a leftover biscuit! This was the extent of my St. Patrick’s Day festivities.
THOUGHT FOR THE WEEK
Here are some Monday words for you to ponder. I’m a terrible decision maker and this one really hit me. Things do have a way of unfolding and working out in ways we could never imagine.
That’s all! Off to a meeting and then to our final birthing class. This one is all about newborn care.
How did you celebrate St. Patrick’s Day? Did you make any special food? Parties?Â
Favorite unwinding ritual after a long week or day?Â
Favorite Thai dish?Â
Hi Jen
Could you share your lemon tahini salad dressing by chance?
That’s one of my most favorite quotes/thoughts. I hope you have a great week, Jen! xx
We went to a bar on St Patrick’s day and did some day drinking and watched our brackets get shredded. Why does that feel soooooo rebellious now that i am no longer in college ? but it was fun.
My fave wind down on Friday is to go to a local winery and sit outside and have some wine. This rarely actually happens but when it does i love it. Instead a lot of my fridays are filled with house cleaning or things like that. i guess i have my winddown more on sunday AMs when i lounge in bed for a while ? i need to change that !
