I haven’t posted weekly menu plans for the last few weeks because our schedule has been crazy. It was so nice to sit down this morning and put together a well thought out menu plan and grocery list. Also, I had time to make waffles for breakfast and pita bread for the week. Ahh…so relaxing!

- Sauteed Trout with Pecans (I will be cutting waaayyy back on the butter in this one)

- Chicken Tacos
- Refried Beans
- Fresh Corn

- Dinner out or grill at home
I’m really looking forward to trying some new recipes like the trout and shakshuka. You know if they turn out well that I will share them with you on Bakin’ and Eggs!
Last night we went to an engagement party for Sarah and her fiance Ryan at Andrew Blairs. Brandon and I walked to the party since the restaurant is only about a mile away and it was a nice evening. We arrived to find that the party was being held on the patio. It was perfect! The hosts did such a great job with everything and the weather was awesome.
Me, Sarah, Amy, Catherine and Kim . I am so happy that I have found this group of girls in Charlotte. They are fun, inspiring, smart and unbelievably nice.
I knew the second that I woke up this morning that waffles were a must. I whipped up some waffle batter while Brandon was still sleeping (it’s always best to let waffle batter rest for at least 30 minutes before cooking). I made a pot of coffee and waited patiently anxiously for Brandon to get up.
I am a total weirdo and like to top my waffles with almond butter, Greek yogurt and a drizzle of maple syrup.
I love special breakfasts on the weekend!
I’ve been working on a batch of pita bread all morning and it’s finally time to put them in the oven. So excited to have homemade pita bread for the week.
What’s your favorite weekend breakfast?
For sure waffles are a weekend favorite. I can’t wait until Trader Joe’s gets the pumpkin waffle mix back in!
I’ve never tried the TJ’s pumpkin waffle mix but I’ve heard so much about it. Definitely going to be on the lookout for it!
I would love to know how you make the pumpkin polenta! i love homemade polenta and i am always trying something new with it. i would love to try to make that!
I haven’t made the pumpkin polenta since last fall so after I make it tonight I’ll be sure to report back with the exact recipe!

Pancakes with maple syrup, some Sundays I make Chocolate Pancakes, but, that is only every now and then as a treat 🙂
Chocolate pancakes sound sooo good!
I use Cacao Powder when I make them, I kind of think it is healthier then normal chocolate, well that is what I tell myself anyway
