Hey guys!
A quick check in to share the meal plan for the week and last week’s workouts. It was so awesome last week to plan ahead of time and share it with you guys. It really kept me accountable and I only made one grocery trip the whole week.
I had a crazy afternoon today of teaching (three in a row). Tanner and I took the girls for an evening walk and then came home and were looking at each other at 8 p.m. doing the “what do you want to have for dinner” tango (never fun) so I found myself at Harris Teeter trying to throw together a last-minute dinner. I decided I was coming home and planning the rest of the week. It makes me feel so much more organized and relaxed.
Here’s what we’re working with this week…
Weekly Meal Plan
Sunday:
Monday:
Easy Hoisin Shrimp over cauliflower rice with sauteed baby bok choy
Tuesday:
Parmesan Chicken with Caesar Roasted Romaine along with herb and garlic roasted potatoes
Wednesday:
Grilled pork chops with my dad’s grilled plantains and sauteed zucchini and squash (so I can share the plantain recipe with you!)
Thursday:
Lemon Honey Chicken Thighs with roasted broccoli and couscous
Friday:
Date night – we’ll either cook a fancy dinner in or go out
Saturday:
at the beach!
Last Week’s Workouts
Monday:
Hot yoga + walk
Tuesday:
SkyFit treadmill workout + strength
I did a SkyFit workout that combined sprint intervals and bodyweight exercises. It was really good! I finished with some strength work including bench, pull ups, lat pull downs and leg press.
Wednesday:
2 mile treadmill run + strength (workout details in this post along with 5 of my favorite strength workouts!)
Thursday:
Hot yoga
Friday:
2.5 mile SkyFit treadmill workout + session with my trainer
I had not seen my trainer in a month and she crushed me. We started with a leg press pyramid building weight and then did three rounds of squats, deadlifts and resistance band shuffles before working back down the leg press pyramid. Then she annihilated my upper body with pull ups, lat pulldowns, tricep press downs and weighted jump rope. It was a fun time.

Teach HIIT and Total Strength at the Y + walk

Best workout last week? Brag a little!
I don’t know how people can stand not planning their meals each week! It saves so much time and $ (I try to plan meals that use some of the same perishable stuff so they don’t go to waste). We’ve been all about summer foods lately- salads, corn on the cob, (veggie) burgers…
Best workout this week? Yogasculpt. It was a hot and humid day which made the studio even hotter and stickier than usual. It was hard, but I felt amazing afterwards! Have a great week!

I’ve been a subscriber to Cooksmarts (an online meal planning service) for a few months now and am really happy with it – I find sitting down to figure out what the heck to eat the next week incredibly overwhelming. I like that not only they do that for you (plus provide an automated shopping list), but it challenges me to try things I wouldn’t necessarily – like spring rolls which were on last week’s menu.
I too did a killer Skyfit treadmill workout this weekend! My knees had been feeling a little weird after I had introduced running into my regime, but thankfully things seem to have evened out. Love those treadmill workouts!
I’ve heard about Cooksmarts. I need to read more about it and maybe try it. I spend WAY too much time meal planning. Glad you are liking Skyfit!
My best workout was definitely Yoga in the Park on Sunday. I’ve also been really into sprints lately at the track. My husband and I went Saturday and I can totally feel it today.
i HATE the whats for dinner tango ! and i hate meal planning when neither of us have any ideas ! Last week my best workout was a HIIT one i did myself. treadmill run 1/2 mile, squats, arm presses, push ups. repeat 4xs. i was a sweaty mess. i actually did pretty much the same thing today at lunch for my workout. On my meal plan this week…pesto chicken salad, burgers, steak, and spinach/sausage/sweet pot one skillet type meal. im trying to lay off the cheese a bit this week and see how i feel. i just know i cant cut it out entirely but seeing if cutting down a bit will make a difference. i sorta dont want it to be true !

It did look awesome and then it was just okay. Bummer when that happens!
