Okay, back to the regular stuff. I’m cuddled up on the couch with a fire and a sweet golden retriever laying (on the floor) next to me. I’ve taught/trained 9 classes/clients in the last two days and I’m wiped out! Let me catch you up on what I’ve been eating the last couple of days.
Breakfast
Plain yogurt with granola, banana, sunflower seed butter and cranberry sauce.
Overnight oats made with coconut milk eggnog.
Lunch
Carrot ginger soup and chicken sandwich with orange slices.
Chicken sandwich with a side salad. (These sandwiches had mayo, avocado, Boar’s Head chicken, pepper jack, tomatoes and cranberry sauce on them.)
Salad with mixed super greens, roasted beets, avocado, pumpkin seeds, dried cranberries, Trader Joe’s blueberry goat cheese and leftover roasted acorn squash with a drizzle of aged balsamic and olive oil. I also had a bowl of tomato basil soup on the side.
Dinner
Filet with marsala mushroom sauce cooked in a cast iron skillet, lobster tail and asparagus. Quite a Sunday night dinner I cooked up, huh? SO GOOD!
Spiced chicken with roasted acorn squash, brussels sprouts with shredded manchego and balsamic and cranberry sauce. I highly recommend that you top your roasted brussels sprouts with manchego. It was an excellent last minute decision.
Takeout sushi.

What’s been your staple breakfast or lunch lately? This week I have been on a Greek yogurt kick for breakfast and continuing the soup/sandwich/salad trend at home. I don’t think I’ve eaten this many sandwiches for lunch in years. Craving them!!!
I have gotten into a habit of eating leftovers for breakfast – usually some form of grains and vegetables with TJ’s sriracha (I’m obsessed). And lunch is usually some version of a tofu or tempeh sandwich. Although, overnight oats with coconut milk eggnog sounds really good. It has been way too long since I’ve made some overnight oats!
I’ve been eating a whole grapefruit with almost every breakfast. I figure I’ve got to eat them when they are in season!

I have been a slacker with my meals lately due to it being the end of the semester and we are trying to close on our house…but, I pretty much eat a salad every day because I LOVE lettuce…a lot..haha!
Yum to all that delicious looking food! Staples lately: millet breakfast porridge with homemade cranberry sauce.
I’m still on a green smoothie kick for breakfast even though the weather here has been in the 20’s! Yikes!

Thanks to your recipes, I’ve started to really enjoy oatmeal! I never liked it before, but adding peanut butter and jam to the mix is genius. I have it almost every day!
