Hi and happy hump day! I’m here with nothing but food pictures for you today after yesterday’s hair extravaganza! Thanks for all your comments and compliments. Apparently I need to buy a curling iron and spend some time on YouTube if I want to master curling my own hair.
I started my day by teaching hot vinyasa at Y2 at 6:30 a.m. and I’m about to train a client. The rest of the day is meetings, computer work building a website and coaching CrossFit. I’m going to go for a quick run after this client to get my workout in. It’s sunny and high 60s in Charlotte today. Amazing weather!
Here’s what I’ve been eating the last few days!
Breakfast has been all about the pumpkin. Tuesday was pumpkin overnight oats with lots of chia seeds.
And this morning was hot pumpkin oatmeal with the following…
1/4 cup old fashioned oats
2 tablespoons quick cooking steel cut oats
dash of salt
dash of pumpkin pie spice
1/2 banana thinly sliced
2 tablespoons dried cranberries
1 tablespoon chia seeds
1/4 cup pumpkin puree
1/3 cup coconut milk
1/3 cup water
Cooked on the stovetop on low for about 10 minutes. Vigorously stirred it with a wooden spoon right before serving and topped with the following.
Trader Joe’s pumpkin butter swirled in
Sunflower seed butter
Pumpkin seeds
Lunch has been the usual salad topped with salmon and lots of other goodies.
And something a little different…grilled cheese and bean and butternut chili. I’ll be posting the recipe for this chili this week. It’s my favorite chili ever!
Monday night dinner was leftover three ingredient pot roast over polenta and roasted brussles sprouts and mushrooms. I will also be posting the recipe for this pot roast soon. It’s my favorite pot roast recipe. I’ve been eating good this week!
And some pizza to wrap up the eats. I had dinner at a friend’s house last night and we made a variety of pizzas using Flat Out Wraps as crust. I had never tried this before but it turned out great. She pre-cooked the wraps by brushing them with olive oil and putting them in the oven under a low broiler until they were slightly crispy. I was tasked with topping the pizzas and had fun making different combinations.

Please post that recipe soon! I have a butternut squash sitting in my fridge that I’ve been wondering what to do with. I was going to make soup but chili sounds much yummier during these cold dreary days!

Love the food and the hair. I never do my hair either for the same reason I don’t wear much make-up. I just never learned HOW.
