So maybe it wasn’t the best idea to launch a new blog in the middle of closing on a house and moving. I’m sorry that I haven’t been able to get daily updates in but I feel like I’ve been working nonstop on the house. I’ve set my alarm early every day this week to get up and get some unpacking/organization in before work and worked late into the evenings but it seems like I’m going in slow motion – it’s taking forever! On the bright side, we are LOVING the house and so happy that this is where we ended up!
Highlights of my eats over the past two days…
Tuesday morning started off with unpictured banana oats. Of course, they hit the spot. I sweet talked Brandon into picking up local strawberries on his way home for lunch. Ever since I heard that NC strawberries were available at the market, I couldn’t get them off my mind.
I made a big salad featuring strawberries for lunch.
Baby greens, spinach, mushrooms, strawberries, almonds, feta, carrots and balsamic vinaigrette. On the side was a slice of Great Harvest bread and a bit of Smart Balance spread.
My pre-yoga snack was an Apple Pie Larabar. Despite how busy I am, I just couldn’t skip out on yoga yesterday. Although apparently I was losing my mind because I realized as I was walking into the studio that I had forgotten my yoga mat. Seriously!? I almost turned around and left but just decided to suck it up and rent one (ew). Thankfully I ended up running into Sarah who was leaving yoga and insisted that I borrow hers. THANK YOU SARAH! I was definitely not calm when I walked into the studio but after lots of encouragement to breathe and relax, I left a much happier person.
Brandon and I enjoyed dinner outside for the first time in our new house!
I adore eating outside and was so happy we were able to enjoy lunch and dinner outside yesterday!
And what better way to celebrate your first outdoor dinner in your new house than with kebabs! Yum. Chicken, Vidalia onions (so sweet!), red pepper and mushrooms.
On the side was a really great whole wheat pasta salad that I’ll be posting on Bakin’ and Eggs in the coming days. Dessert was more strawberries ๐
And again this morning the strawberries were calling my name. I abandoned oatmeal in favor of a yogurt/granola combination.
Into the tupperware went Vanilla Chobani, Earth Fare Tahitian Vanilla Granola, almonds, dried mixed berries, chia seeds and a whole lot of strawberries.
The day flew by and unfortunately ended in a killer headache. I broke around 2:30 to eat a peanut butter, honey and banana sandwich but it did little to touch the headache that had formed. I think my body was just tired. I decided to take the day off of exercise, hydrate and just work around the house.
Brandon got home around 8:45 and rather than cook we decided to head over to Sir Eds for a quick dinner.
I had the spicy asparagus and portobello grilled cheese with a side salad. I love this sandwich – such a fun and tasty twist on grilled cheese.
It is late, I am tired and facing another early morning wake up call. More to do before I head into work tomorrow morning but it’s all worth it – happy stuff! ๐
