I’m emerging after a long (but completely awesome) weekend of teacher training. Saturday was a crazy busy day so I took a break from blogging and taking pictures. I started training at 7:30 a.m. and we went through to 5:30 p.m. When I got home from training we had to head straight to an engagement party for one of Brandon’s friends. I finally collapsed into bed around 11 p.m. but had the time change to contend with so I lost an hour of sleep. Luckily, I was able to sleep until about 7:15 this morning so I felt pretty good going into today.
The hardest part of the “clean eating challenge” so far has been giving up coffee…as anticipated. I had a killer headache yesterday but today was much better.
I packed breakfast to eat after the morning ashtanga practice.
Plain 2% Greek yogurt with Bob’s Red Mill Muesli, banana, blueberries and chia seeds.
We had a 90-minute break for lunch today so I took advantage of it to come home and visit with Brandon and Sullie and enjoy the beautiful day.
I quickly changed into shorts and a tank, assembled a salad and took my lunch outside to soak up the sun.
Giant delicious salad with spinach, mixed greens, tofu, apple, dried cranberries, carrots, celery, green pepper, almonds and colby-jack cheese. Toast on the side.
Our afternoon session of teacher training was so much fun. We sat outside of the bookstore that is in the same shopping center as the studio and reviewed everyone’s class sequences that we did for homework. I think we were all happy to get a change of scenery and some fresh air.
It was especially entertaining when we parts of sequences got demoed – there were other people on the patio laughing at us and taking pictures with their phones.
It was great to leave training at 6 p.m. with the sun still shining. I LOVE daylight savings time and can’t wait to take advantage of the extra daylight to go on walks with Sullie, run more, grill and eat outside! What do you guys love most about the longer days?
I was starving when I got home so I made an old school snack.
Ants on a log!!!
We met Brandon’s parents for dinner at Brixx.
I have been so busy lately that I haven’t even seen my in law’s since we hosted the Super Bowl party! That is crazy given that they live right here in Charlotte. It was so good to catch up with them!
Brandon and I split the Brixx Salad – mixed greens, pistachios, goat cheese and croutons.
I ordered my all-time favorite, the Artichoke Pizza on wheat crust. I love this pizza – pesto, mozz, artichokes, sundried tomatoes and roasted red peppers. I ate the whole thing! I’m not sure that it fit perfectly into my clean eating plan but it was meatless and I’ve been doing good with the sugar, coffee and alcohol so I’m okay with it!
Off to figure out what I’m teaching for BodyPump tomorrow morning. Hope everyone had a great weekend!
I know I’m in the minority here, but I actually don’t love longer days. *gasp!* 😀
I’m a night owl, and I find myself both more productive and energised by night time… And shorter days means it’s winter, and I live and die for winter sports. The big prob is that I’m so far north that come June, there’s a permanent blue-y patch to the north of us at night instead of full-on darkness. AND we only have “mostly dark” from about 10.45pm-3.45am. Zounds!
BUT: since this whole “seasons” thing just keeps happening regardless, let’s focus on the positive: there’s something to be said for warmer air on morning runs!
me too! I like the mornings to be bright! but I am a grandma. In bed early. Time to change my perspective! Pun intended. hehe.
😉
I will admit that it was hard getting out of bed Sunday morning in total darkenss at 7 a.m.!!!
That is CRAZY that you only have that short period of darkness! Wow! I love your “let’s just focus on the positives…” I laughed out loud! 😉
I’m with you on not liking the time change so much either. . . but for different reasons.
I don’t like the time change because now the sun doesn’t rise until later in the morning (I love when the sun is shining when I wake up.) and now sets too close to my bedtime of 9 p.m.
I feel your pain when it doesn’t get very dark at night during the summer, as I live in Alaska. It is so hard for me to fall asleep!!
That pizza always makes my mouth water. Pizza is my very favorite food. I love when it’s topped with pesto!
I can’t get over how gorgeous it is down there. Sitting outside in shorts and a tank? So nice!
I know, veggie pizzas…especially those featuring sundried tomatoes and pesto…are my absolute favorites!!!
Hopefully this weather will make its way up to you soon!
I love grilling and eating outdoors!! Best part of spring because there aren’t any bugs around yet. 🙂
Glad the yoga teacher training is goig so well!
Oh, and that pizza totally fits into clean eating. 😉
Thanks for the confirmation – I thought so too! 😉
I love the time change! When I leave work and it’s still light outside, I feel like I have the whole day ahead of me. We grill out, play in the yard, and go for long family walks. Love it!
That pizza looks fantastic. I may have to recreate that one at home.
I SO agree with everything you’ve said. Sunlight and longer days just make me happy! 😛
I need to try the artichoke pizza!
You are obviously an extrovert. Had I been doing yoga all day nothing could have convinced me to leave my house in the evening. Sorry about the headaches. You could drink tea which has less caffeine that coffee and more antioxidants.
I love the time change! I can’t wait for warmer weather: longer days, grilling dinner, after dinner playing at the park, family walks…I’m smiling just thinking about it all 🙂
I would have eaten the whole pizza too. Your salad looks amazing and girl you are gorgeous!!!
Aww I love that picture of you on your patio in the sun!! Wish it looked like that over here!! 😛
And a pizza is totally clean eating!! It has veggies, so it’s good for you!! 😉
I went on an ‘ants on a log’ kick last week! I added some golden raisins and even craisins to switch it up — what a simple and delicious snack!
Your pizza looks delicious — glad you could enjoy it fully!
Yummm, healthy food + sunshine makes me SO ready for summer!!!!!
