It makes my heart happy that you are enjoying reading about my yoga teacher training experience. It is such an important thing in my life right now and writing about it feels so good. Thank you for your positive feedback and encouraging comments. I smiled all day as I read them!
Let’s talk about something else tonight. How about food and Sullie cuteness – sounds good, right? Here are some highlights of what I’ve been eating the last few days.
The first meal that I’ve enjoyed outdoors in months. We had an unseasonably warm weekend and I spent my lunch break Saturday outside with Sullie. It was glorious. Greek-inspired red quinoa over mixed greens topped with plain Greek yogurt, hummus and feta. A kiwi on the side.
I can’t even get over how happy this cute face makes me.
An iced coffee was the perfect midday pick me up.
Sullie and I loved soaking up the sunshine. I can’t wait until Spring is here to stay.
[Not my food!!!] I went to Earth Fare Sunday for lunch and found the difference in food selection between myself and my teacher hilarious. I mean, seriously.
Yoga teacher…pizza, chips, guacamole and a cookie. Yoga student…spinach, butternut squash salad, tofu scramble, fresh fruit and a whole wheat chocolate chip oatmeal cookie. How he eats like this and stays healthy and as physically active as he is just completely blows my mind.
Dinner Sunday night was chicken parmesan and salad.
I somehow rolled myself out of bed and made it to the Y to teach BodyPump at 6 a.m. this morning. After BodyPump I had a delicious breakfast of apple cinnamon oatmeal in an almost empty apple butter jar. I came home for lunch.
I actually put a top on my sandwich today! AND it was a new combination. Mashed avocado, scrambled egg, spinach and cheddar on a whole wheat bagel thin. I was really craving eggs today for some reason and this sandwich totally hit the spot.
And finally, dinner tonight was baked mahi mahi with a chili spice rub, a baked sweet potato and green beans. Simple, healthy and delicious.
I must admit that we have been watching The Bachelor tonight (for the first time this season) and it is highly entertaining. Michelle is crazy. Emily from Charlotte is lovely. Funeral director girl is kind of winning me over.

I am watching the Bachelor right now! I tape it so i can fast forward the silly parts, but it is such a hot mess – I love it!

Your teacher’s lunch looks like what my husband would love to have for his lunch if I wasn’t forcing him this month to eat healthy 🙂 But, just like you, I have no idea how they do that. I think it must be their genes, because such food will just make me crash in bed, unable to move for hours.
And, since we are on a food note: hummus over quinoa? nice!! I must try this. I’ve cooked many times quinoa with feta, but I never thought of adding hummus. It’s decided – trying it this week!
I agree, Claudie. Even if you can eat that food and look good it doesn’t mean that it makes you feel good!
The hummus over quinoa idea came to me when I was going to top it with Greek yogurt and saw the hummus in the fridge. It was a good addition, especially since I was already going with Mediterranean flavors!
Kathryn Budig is a great Ashtanga instructor that I’ve taken a couple of classes from- very challenging but funny and light-hearted. She is teaching a workshop in Chapel Hill, NC in March (she is also on yogaglo.com)!

Aren’t dogs the best? Sullie is so very cute. I can see why that face makes you so happy. So glad you are enjoying yoga teacher training! Think you’ll try to teach at Y2 when you get certification? I would definitely go to your class! 🙂
Yes, dogs are THE best. How much being with her can improve my mood is crazy!
I’m not sure where (or how much) I will teach after I finish training. I know I will sub some classes at the Y but probably won’t take on a permanent class there (because I just don’t think I want to). Hopefully I will be able to at least start out subbing at Y2 but who knows. I think it will depend on how the rest of teacher training goes! 😉
I am loving the Bachelor this season!! Go EMILY! Love seeing a local on the show.. makes it more fun to watch and I cry at her story everytime 🙁 haha
I don’t understand how men can eat like that and stay healthy. My fiance can eat whatever he wants and doesn’t put on any weight. No fair!
I know! I felt so bad for her that they made her do the plane and the NASCAR track. The producers sure want to make good television, huh?
Sometimes I wonder how men can eat like that too but then I just think that regardless of their weight, eating that kind of food still can’t be good for your body so I’m happy with my healthier choices. 🙂

Sullie is so adorable! Love T’s lunch… He is a funny dude! I too am sucked into The Bachelor (as usual) this season. I feel like Brad is kind of a moron, but I’m still entertained.

I love eating at Earth Fare with T! It makes me laugh when he buys two desserts…just in case we want to eat some of his!! Michelle is certified crazy! My ashtanga practice was way off this morning…hope I get back on track! 🙂

Aww Sullie is too precious. Isn’t it funny how our dog’s faces cheer us up so much? I cannot tell you how many times during the day I go downstairs just to see Nati. That sounds insane… 😉
